Por la influencia de sus viajes por España, el chef James genera sinergias entre auténticos ingredientes españoles para crear platillos tradicionales y modernos. Elabora platillos como rodajas finas de atún rociadas con alioli de naranja de sangre y cubierto con aceitunas de Kalamata y sal marina ahumada para crear una constelación de diferentes sabores en cada probadita.
