Had the tuna appetizer on brunch menu but it needed something to enhance the texture profile- was mushy and needed crackers or some crunch. Flavor was good but the appearance and delivery were lackluster. Had delicious chocolate dessert and tiramisu. The Food & Drinks – A Culinary Masterclass. The highlight of the meal was the Wagyu steaks, cooked to absolute perfection—tender, flavorful, and expertly prepared. The octopus, served on a bed of spicy beans, was another standout, offering a rich, indulgent contrast with just the right amount of heat. Every dish was carefully crafted, making it clear why Guard and Grace is a Denver favorite. The cocktails were equally impressive—artfully made, balanced, and bursting with creativity. Each sip was a delight, complementing the meal beautifully. Service – Impeccable Our server, Nitia, was an absolute gem. She was knowledgeable, kind, and incredibly attentive without being intrusive. Her expertise in guiding us through the menu and wine selection elevated the experience. The entire staff operated seamlessly, adding to the polished feel of the evening. Atmosphere – A Mixed Bag The open kitchen view is a highlight. Watching the precision and skill of the kitchen team in action adds an engaging, immersive element to the meal. However, the noise level in the dining room was a serious drawback. It wasn’t just the sounds from the kitchen—the speakers directly above our table were far too loud, making it difficult to hold a conversation. A simple adjustment to the volume could significantly enhance the dining experience without compromising the vibrant atmosphere. Dress Code – A Conflicted Experience Now, this may be my “old man complaint,” but when you’re spending upwards of $800 for a fine dining experience, you expect a certain level of decorum. Dressing up is part of the occasion, adding to the sense of occasion and respect for the craft on display. Unfortunately, this time going in with a reservation, the hostess/lady seating people was extremely rude. I tried to lighten the mood a bit, but she was just incredibly unpleasant. To be honest, if I hadn't been in before, I probably would have walked out due to her off-putting & cold attitude and demeanor (red hair w/ glasses). Hopefully this will be addressed considering the hostess is your very first impression of the service/experience to expect. We also received our salads, apps and entrees all at the same time which was also very disappointing and easily preventable. This is not normal though and our waitress was really great! The food was absolutely delicious!!! The music is divine, the staff is great and for those who might dance a bit, there is room around the lobby. The wine and cocktail list is excellent. The service is exceptional. The small plates we chose included: Chilled Vegetable Roll, Pan Seared Chicken Dumplings, and the absolutely amazing Beet Salad. Our large Plates included: Roasted Salmon (perfection in taste and temperature) and the Spicy Chicken Stir Fry (love the "zip" of the spice!). All were so delicious and flavorful. The presentations were artistic. For dessert, we selected the Apple Tart Tatin, with candied 5-spiced walnuts and ice cream. The rice pudding was also delicious, and uniquely served.
