El Bavette hace un homenaje moderno a una antigua tradición, que es la de la carnicería local. El Bavette se esfuerza por respetar esas tradiciones de calidad y excelencia y se provee de animales enteros que han sido criados de manera responsable en granjas pequeñas y locales. Los cortes de la carne se hacen según la costumbre. Al obtener las canales enteras, el Bavette logra más sostenibilidad y genera menos residuos. Además, el Bavette proporciona una trazabilidad total de su carne hasta una granja en particular y, en muchos casos, hasta el animal concreto. With humility and gratitude our pizza was ranked nationally as the 46th best pizza in North America and we are very proud to serve many happy diners here in Milwaukee.

The pharmacy was appropriately named for the constant activity that took place just outside - the boarding, departures, and transfers of the countless daily commuters of the time.
