Le Coyote Cafe, qui fête ses 29 ans, est toujours le restaurant le plus célèbre de Santa Fe ! Parmi les plats incontournables, se trouvent le foie gras & coquille Saint-Jacques façon pêcheur, la salade César au Futomaki et la légendaire entrecôte « Coupe Cow-boy » de 680 grammes, clin d'œil à l'héritage du Sud-Ouest.
