A word from Beast and Bottle
beast + bottle is a rustic American restaurant serving craft dinner and brunch.

Run by siblings Paul C. Reilly, who mans the burners, and Aileen Reilly, who oversees front of house, beast + bottle is located in Denver’s Uptown neighborhood.

The “beast” refers to the restaurant’s appreciation for the whole animal, utilizing all parts to honor its integrity. The owners’ relationships with farmers, ranchers and purveyors bring ethically and humanely raised, responsibly harvested and organic (whenever possible) ingredients to the table.

The “bottle” refers to drinks. b+b’s wine program is influenced by the European tradition of drinking wine how you’d like – whether that’s a glass or by the liter.

The menu changes whenever the kitchen pleases based on what’s in-season and what the cooks are enjoying at the moment. What remains constant is a steady focus on sustainability and versatility of ingredients.

  • "While making my reservation I noted it was my wife’s birthday. When we were seated our waitress, Hannah said happy birthday. Through out the dinner we were surprised with a birthday champagne toast and desert. We were blown away at the level of service by Hannah and the entire staff. Everyone was super friendly and made us feel very welcomed. The food was amazing. The combination the service and food made for a great birthday dinner. Thanks to the entire staff for the great dining experience."

Pea cakes were dry, polenta fried green tomatoes the same. I will go back, because I love the people, atmosphere and location...so maybe I am being too picky on the food."

Pasta was a little too au dente for my taste buds as it was thick pasta...Bread was excellent accompanied by French butter-- Bison appetizer was excellent.... Pasta was served lukewarm but management again righted the wrong... Puroc Pork dish was just so-so as the meat seemed to be overcooked... But the person who ordered that had another meal made for them which turned out perfect... Drinks were delicious... Wine was excellent..."

  • "Had high expectations that were not met. While menu is thoughtfully put together the food preparation had some real missteps. My salad dressing was too oily and the salad was over dressed which was a shame because greens were so fresh. My chicken with pasta was billed as being light but the sauce was heavy and not particularly interesting. One stand out was lamb dish friend ordered. Desserts were also not remarkable except basil ice cream/sorbet. Grilled lemon pound cake was bland with little hint of lemon. And the use of fans to cool dining was annoying. The one next to our table kept falling off block it was propped upon. Need better solution."

  • "We have eaten here many times for both brunch and dinner and found it to be consistently terrific. Paul Reilly is an innovative chef who provides an evolving and eclectic but accessible menu. This time (brunch) I had the lamb shank hash that is based on a house "corned" lamb shank topped with a perfectly cooked farm fresh egg. Out of this world. Service is prompt, professional and low key. Ambience is relaxed. Great experience."

  • "The past two times I've visited beast + bottle for brunch, the place was unbearably hot. I'm not sure if they don't have central air or if they choose not to run it because the ceiling fans add to the ambiance of the restaurant, but it's impossible to enjoy a meal there when you're overwhelmed by the heat and stuffiness of the place. Both times I've almost passed out. It's a shame, because the food is delicious."

  • "I've been trying to make a reservation here for about a year. I finally got one on a Wed night. It was so slow despite less than half of the tables occupied: It took almost 2 hours to get our entrees! The carpaccio was too salty, I wanted to return it but the waiter never came by to complain to. We finished it because we were hugry, then complained. The entrees and wine were delicious, not amazing as I was expecting. About 30 mins after we finished our appetizer, we complained about the slow service. He said he was sorry. Horrible service, salty carpaccio and nothing was offered, no free glass of wine, dessert, not even taking the carpaccio off the bill. There are too many great restaurants w great service in Denver to return to B & B."

The dishes are unique and inspiring. The food quality is excellent, well presented and done with knowledgeable wait staff.   • "Trying not to be too harsh but the experience was disappointing. Took way too long before any one bothered to stop by the table for water service or to greet the table. Staff was friendly but seemed very discombobulated and novice. Ingredients fresh and well prepared but nothing jumped out as "wow, this is really good, we should come back here". Also baffles me when a higher end place chooses not to provide bread service as a courtesy to the diner."

  • "Overall, we liked the soothing decor and the wait staff. That being said, we thought the tasting menu was overpriced and under value. We didn't like the fact that any and most of the higher priced items were an add-on! The price of 64 or 62 a person should have covered it all. We would have been better off picking a la carte. Although we loved the flavors, the lamb was undercooked and tough. We nicely explained that to our server in the hopes that it would be constructive help, but she provided us with an excuse instead. We dine out often and in similar types of establishments so we felt comfortable with I would say that the high pricing might give us a second thought about choosing this again."

  • "I enjoyed the food overall. I felt the portions were a very small for the price but the quality was good. The servers are very attentive, some of the best in Denver. This was my second time to eat here. I doubt I'll go back based on portion size and lighting. It's just too hard to read the menu in that light. One important note, the staff will bend over backwards to help your scheduling changes. That was very helpful and appreciated."

  • "The former purveyers of Encore have reached new heights in the spot that was the home of Olivea. The decor is classy, light and airy but stuffy. As we were eating early, 6.30, on a week night it was not crowded but the place filled up by the time we left at 8.30. We ordered from the small plates, flatbreads and greens. The crab and pork belly was lovely except the soft shell crab was a bit soggy like it was put in the fryer to early or sat too long. Everything else we ate was perfect and beautifully presented. The root vegetable raw salad was fabulous with a roasted chard & leek vinegar dressing. I tasted every herb and root shaving. The dessert, including a peppercorn cake, was unusual and delicious...we almost licked the plate. "

Our reservation was for 5:00 -- we arrived just as the restaurant was opening -- which undoubtedly affected the waiter's attention to us (he had other things to attend to: putting water bottles on tables outside, etc.). When he came to our table, he was knowledgeable and attentive. We will go back again. "

  • "We were looking at urbanspoon the night before my graduation, freakin out as to where we would get our celebratory noms after I received my diploma. It recommended this restaurant and I am more than elated that we went there. Graduation ended an hour and a half before our reservation and the staff at beast + bottle was gracious enough to let us move our reservation forward. The atmosphere was calm and pleasant, elegant but simple place settings, the service was fantastic and all the brunch food was to die for. Definitely going to come back there for another brunch date! "

Service was a lil lackluster, but I always give server a break, knowing how Sunday brunch can be. The team service did make up for it though, just wish we would have seen our own server a little more. Always a fun place, regardless"

They told me the next reservation was 2 hours away so we'd be fine. Then 15 minutes turned to 30 minutes. I called again and agreed to get my butt out of there quickly if needed. Hostess laughed and said "deal." Turns out was not a problem. Our server was outstanding. "
