For a recent anniversary we had the pleasure of dining here and were quickly reminded that it had been way too long between visits. What an exceptional meal! Our server Riley was truly a star, and the other staff members were a great support in serving the food and wine pairings in a very timely and orderly fashion. While the YYC Food and Drink Experience was long over, luckily for us, Vero Bistro recognized how awesome their YYC EXP menu was and extended it into April. With the exception of the very first course, everything was absolutely delicious. The first course, "Cotton Candy", while probably the most visually creative, came with the duck foie gras pate way too cold, like a little frozen pate bite in the midst of the sugary sweetness. I understand that it probably has to be very cold for the cotton candy to be able to be swirled around it. Oh well...I very quickly forgot that bite, while holding onto the visually appealing memory. Everything after that was ah-mazing. The tuna crudo was SUPER delicious, and my hub's favourite. And the steak...oh my, the steak...it turned into a grand discussion (as we both love to cook - especially me) as to how it was so well done, a little crispy on the outside, while inside in was perfectly medium rare, tender and flavorful throughout. I could've sworn there was sous vide involved. Riley said "No way, pretty sure it's the way it's marinated". I guess that'll ever remain the incredibly talented Chef Jenny's secret. While the menu in general was pretty sweet forward, they were able to modify it somewhat to support my husband requirements of maintaining a more stable blood sugar level, by keeping a few of the sauces on the side. The wine pairing was good too, but probably next time we would opt for a bottle of Champagne and a red Burgundy. Those would have complimented all of the dishes beautifully. All in all, a 10 star experience and we can hardly wait to come back!
