Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

Sazon was one of the top two culinary experiences of my life. The other was in Positano Italy at Relias Blue. This is definitely one of the most memorable days of my life. I would definitely recommend the ‘chefs choice’ 9 course meal with wine and tequila pairings. That’s not what they called it but I cannot think of the official name at the moment. Trust ‘me, you will not regret it

Food was outstanding. Service impeccable. The attention to detail was greatly appreciated. Our waiter noticed my guest ordered sauce on the side for one of the appetizers and proactively did the same for entree which she was appreciative of. One of my favorite restaurants in Santa Fe.

One of the best dining experiences of my life. This is Michelin star level quality dining and service. I had a great time here a few years ago and finally came back post lockdowns. It lived up to my memories and I couldn’t be happier. The crepe dessert that is off-menu, sopa de amor, huitlacoche, zucchini blossoms are all exemplary. For a drink try their take on the old fashioned but with mezcal - the caballero.

Not sure where to start- we walked in for our reservation after a group of five- we were seated and waited about 10 minutes for someone to even bring us water. Meanwhile the table of five seated next to us were greeted and drinks orders taken . Finally water arrived and the server came over- she also was serving the table of 5. I ordered the special bone marrow which was good but very small portion. I then had the pork loin with my choice of mole. The pork was over cooked. My husband got the duck breast which he said portions were also overcooked. My son ordered the lamb chomps which again were a very small amount of meat. We were very disappointed in the service- our water glasses were left empty for large amounts of time as servers walked by and looked at them and proceeded to fill other tables water glasses. My husband was in Santa Fe for a meeting and several people said they dined here and said it was exceptional. It was probably one of our bottom meals for the price point that we have ever had. Their sister Italian restaurant- which we visited earlier in the week - was one of my top five best meals. Our experience was very disappointing . The food should have been top notch for the price point..

The food was simply outstanding! We ordered several starters from the special menu (octopus, squash blossoms, soup of the day) and they were all divine. Choosing your own mole sauce and pairing it with your desired meat was also a delight. I recommend the sea bass with the apricot mole. I can’t remember when I’ve last enjoyed a meal so much.

This was one of the most amazing dining experiences that I’ve ever enjoyed. The menu knowledge of our server was amazing.She served more as our tour guide at first. She led us through 6 moles and 4 different proteins.

The cocktails, wine list and table attention was amazing.

The staff encouraged you to taste the food and guided us through the flavors we would experience with each bite.

Absolutely amazing from arrival to departure.

Closed with great desserts too! Chef Fernando is one of a kind. His passion and vision shine in every plate.

The chef/owner was fantastic. I made the reservation on the wrong date. He happened to be at the check in desk and was gracious and just made a table happen for us. The shrimp appetizer was to die for. Our main courses were excellent too. I HIGHLY RECOMMEND THIS RESTAURANT!!!!!!!

If there were ten stars, I would give them. The service is such a lovely thing to experience. Totally trained in all nuances of taking special care of your whole table. And the food is totally exceptional. We have been fortunate to eat there every time we are in Santa Fe and will again. You will need to make reservations quite a bit in advance - very much worth the effort!

Jordan is eloquent and fluent in every aspect of your food and beverage choices.
Fernando, the fabulous chef, has a personality that is almost more grand than the cuisine he presents. Sazon is a must when in Santa Fe.

Sazon and Chef Olea deserve a Michelin star. Everything was superb. We had his signature soup, 4 appetizers, an entree with 2 of his unique moles, and the most amazing signature dessert. It was such an outstanding meal at every level. We have dined around the world, including at Michelin star restaurants, which weren’t as good as Sazon. If you go to Santa Fe, you must visit this gem of a restaurant. It’s pure gastronomique pleasure!

The place is amazing. The food uniquely conceived and presented by an amazingly well coordinated wait staff. Beautiful wine list but the winner is the amazing food. If you don’t walk out and think it’s one of the top five places you’ve ever eaten, I’d be shocked. The owner/chef makes his way through the dining room pausing to greet guests and receive compliments or suggestions. If you’re in Santa Fe or within a 100 miles, get the to Sazón for a wonderful experience.

I can’t put into words how wonderful the experience was. The staff went above and beyond to make us comfortable and inform us about the menu. The chef made a special dish for my mom who has food allergies. The owner helped me get in the restaurant (which is stairs and I am in a wheelchair), he carried me in and told me he would treat me like a princess. I did feel like royalty and I really am pleased with everything.

The experience at Sazon was overall wonderful. The food is interesting and different. The cocktails were delicious and the wine list was extensive. I appreciate the presentation of five different moles as an introduction to the meal. Our waiter was excellent and attentive to food allergies. It was nice that the chef greeted every table at some point in the evening. It is expensive, but an experience!

Holy mole, another incredible meal at Sazon! We had the enmoladas duck/sweet potato with the dark mole last night and it was the kind of meal I'll dream about for weeks. The waitstaff was attentive and very knowledgeable bout the menu, as well. How lucky are we that we live in a place that has a restaurant like this one? The goddess has smiled on us.

We have tried to get in here the last two visits to SF. Finally able to get a reservation in advance. We were disappointed as we tried to add 2 friends over 24 hrs in advance. Left 2 messages and received NO response. Got there and had a table for 4 for just the two of us. There is a shortage of staff in restaurant industry that I suspect was the problem. That all being said this was a TERRIFIC meal. Cocktails were good. Started w 5 moles to sample. Picked one to put w fish. Fish was perfectly cooked. Spouse had Coyoacan ( shrimp enchilada) that was DELICIOUS! Our appetizers were Xochimilco that was SO good and the stuffed zucchini blossoms that were so light and perfect. The Volćan de Chocolate capped off a perfect meal.
The restaurant is cozy w a nice level of noise and light. Pretty art work. Will definitely dine here when we return in October, making sure we have the correct number of people when we make our reservation
