Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    The restaurant is unique and very eclectic. We loved that about it. The food was good but not exceptional as we were expecting. The noise level was very loud and the service was average. At times we felt like our waiter had forgotten us.

    We had a wonderful birthday celebration. The food and drinks were impeccable as was our server, Alicia. She noticed that something was wrong with my halibut special as I couldn’t eat it with the spicy Chile preparation. She immediately replaced it with one that was prepared in a simpler fashion. It was perfect! I would highly recommend this restaurant!!

    Absolutely divine! A marvelous dining experience. Very professional staff and exquisite food. Have enjoyed mole’s before but this was real study of the the variety and their impacts on different proteins. Planning another visit.

    We had a truly one-of-a-kind experience here. The space was cozy and beautifully adorned. The food surprised and delighted from dish to dish. Between my partner and I, we shared six dishes of multinational influence bonded by a singular beating heart of Mexican spice and fresh ingredients. Our favorite plates were the "Soup of Love," the Galician-style octopus, and Chef Olea's take on Chile En Nogada. In fact, the man himself spent ample time regaling us about his style and history, shiny new James Beard medal hanging from his neck. The spirit of Old Mexico abides!

    From start to finish Sazon is amazing! We started by sharing a bowl of Chef Olea's signature soup ( next time I won't share) the flavors are beyond describing! I had the Coyoacan which was also so delicious savored every bite! We also ordered the Salmon, again such wonderful flavors! I've already recommended Sazon to friends. Can't wait till my next visit!

    When we stay in Santa Fe, we always make sure that we have reservations at Sazon. The whole experience is incredible from the food, to the staff, to the atmosphere. It is like no place else, a true foodie's delight! We understand why Chef Fernando received the James Beard Award this year. It is well deserved. Congratulations Chef!     The best time ever! We celebrated my wife’s birthday at Sazon. All aspects of the meal simply perfect. The shrimp enchilada is amazing. The range and depth of flavors in the Sopa De Amor is truly genius We enjoyed visiting with Chef Olea, a couple of times during our meal.

    I'm disappointed to have to write this review, as we had a wonderful experience at Sazon previously. Something was very off this time around. The service was just not at the level one should expect at that price point. The chef/owner did make his rounds and greet the guests in the dining room, which is a very nice touch, but that still didn't make up for the poor service. There was a very large group event (lawyers?) in the back of the restaurant and I have a feeling that put a lot of strain on the waitstaff. We sat at our dinner table for nearly 40 mins before we were presented dinner menus. I understand they like to explain the menu and mole pairings, but it would have been nice to review and be ready with questions once the server was able to focus on us. He had several tables, so he seemed like he was spread too thin. I overhead him say he's been on the job for three weeks, which could also explain some of the issues. While we waited we asked the waiter's assistant for menus twice and were met with eye rolls. On a normal evening, the service is very well orchestrated, but this time it felt very strange. To have several servers surround the table and present/clear plates as if it was a choreographed dance was the total opposite of what we experienced up to that point. At that point, why even bother? One of my guests had to send his meal back since the meat was over cooked. The kitchen did prepare a new meal rather quickly, but it was just one more thing to add to the list of issues we experienced that evening. All in all, the food was good, but not the Sazon dining experience we were expecting (and paid for). I hope this was a fluke, but I will think twice before returning.

    When you are at a restaurant and people close their eyes and sigh after their first bite of food you know you are at Sazon. Chef Olea is a culinary genius! We drove 11 hours to dine at Sazon and for a bowl of his signature Sopa de Amor. We were celebrating my 70th birthday and Chef Olea came to our table to talk to us so we got to congratulate him on his James Beard award. The restaurant is beautiful, the food is beyond delicious and we are going back for dinner again tonight.

    Sazon is fantastic. It isn’t cheap but the food is other worldly. Very inventive sauces and perfect preparation make for a winning combination. The chef came by our table to chat which was also quite nice. Very impressive restaurant and chef.

    We absolutely LOVED our first visit to Sazon. From the welcoming smiles at the door to the impeccable table service and explanations of menu options right though to the unique and memorable tastes that go in to our catalogue of "forever highlights." The starting/tasting of four different moles is a fantastic idea to no only showcase the variety of chef ideas and flavors but also to offer the opportunity for pairing a favorite with a protein and allowing the chef to choose complimentary sides. We actually went with direct menu choices because those too were so well described by the amazing wait staff and too inviting to pass up. But, before that was the most amazing soup we may have ever had - Sopa de Amor. We could have taken a bucket of that home with us. The creaminess, the smooth and perfectly balanced poblano pepper heat, the lump crab. Like nothing we've had before and a treat we won't forget, as it just worked so well together. From there we had the Coyoacan shrimp enchilada and Cholula which were also fantastic and two differing yet perfectly balanced tastes that made us feel like there are likely no bad choices at Sazon. The Cholula's spicing reminded me a little bit of a lamb tagine with a little extra poblano kick and just the right tang provided by well proportioned pomegranate seeds. The creamy sauce of deconstructed enchilada was also amazing, perfectly blending zucchini with asadero for something definitely southwest and at the same time anything but typical. To top it off we had the Princesa desert which was another recommendation of the staff and just the right sweet touch to conclude an evening of outstanding service, beautiful space filled with local art, and creative cuisine that was well worth the price. There is a reason chef Olea just won a James Beard award and we were grateful to have the opportunity to congratulate him as he came around to welcome each table. Clearly a first class operation!

    Memorable. That is the word for the Sazón Restaurant in Santa Fe, NM. Gloria Hiller and I were serenaded with the most innovative and delightful meal, that deserves all the details that follow. The Sopa de Amor (Soup of Love) was a poblano cream base with chunks of crab meat, topped with an Amaretto cream foam and sprinkled with Mexican chocolate. Heavenly. Gloria chose the halibut with chili and I had the pork loin with mole (Chef Fernando Oleo is known for his “New Mexican Mole”). Both meals were delectable. The crowning glory was the Dulce de Sinfonía (Sweet Symphony). A dessert that required the guidance of a conductor. A waitress described each layer of flavor as together we spooned our first bite – a ginger sauce, avocado ice cream, toasted pine nuts, a beet reduction sauce laced with a touch of chili heat. Heavenly. Chef Oleo appears like a rodeo rider with a black outfit and cowboy hat. He was first noticed sharing a toast with a table of guests. He later made his rounds to other tables. The service was impeccable. We watched as six servers removed plates in concert around the celebrating guests. I’ve never had such a remarkable restaurant experience.

    We had a wonderful dining experience at Sazón this weekend. Our waiter was friendly and knowledgeable. It was nice to have an opportunity to taste each of their four moles before deciding what to order. The food was excellent. You cannot go wrong with the Manhattan Goes Latin (it's a strong pour), Camaron-Tini appetizer (the shrimp are gigantic), Cholula entree (the spices are hypnotic), and Volcán de Chocolate dessert (the bacon was unexpected and veeery welcome). I really hope that Chef Fernando Olea (and his staff) earn the James Beard Award for Best Chef: Southwest this year.

    We never miss dining at Sazon when we visit Santa Fe. From beginning to end it is always a lovely dining experience. This time, my husband tried the tenderloin. It was tender, perfectly cooked and oh so flavorful. I had shrimp enchiladas with a squash blossom cream sauce - excellent dish!

    This is without a doubt the best restaurant in Santa Fe! Chef Fernando Olea is up for the James Beard award in NYC 2022 as the best chef in the Southwest and I hope he wins. He deserves it! The food is exceptional and innovative. The service staff is amazing. Can't wait to return as soon as possible and try more delicacies on the menu. All foodies run to Sazon, don't walk.     I cannot use enough superlatives to describe dinner at Sazon. The food is wonderful plus great cocktails and wine! The fois Gras is perhaps the best nite of food I have ever had. Again, everyday was superb!
