Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Amazing food, drinks, wine, and service. The James Beard chef made a point of talking to every table. Per our servers suggestion we shared a bottle of Mexican wine, a first for us and it was amazing. Our meal started with a mole sampler they brought out. It had five different moles that you try so you can pick your favorites(s) to have with your entrees. We had two different favs so they served both; our entrees were lamb lollipops and halibut, both off the charts good. Our best meal in a while.

    Truly delicious. I would suggest ordering the soup and dessert that use the chef’s name. I’ve never tasted anything like them. I’m still savoring the experience a day later.

    We had the loveliest night here. Our server Ariana could not have been nicer and made our experience amazing. Kudos to the chef for the most innovative and delicious dishes ever. I rarely taste food this great and I go to many good restaurants. The manager topped our reunion night off with glasses of champagne to celebrate our getting together after ten years.

    Our first time at Sazon and will not be our last! All from the welcome to the check was an outstanding experience. Offering the sample tray of moles to begin is a nice touch. Fine dining that is truly fine.

    Such a fun dining experience! We had great drinks, mole sauces, the soup was amazing, great entrees and very good dessert with amazing flavors. Service was exquisite.

    Specialty cocktails, squash blossoms, pulpo, all a delicious way to start out. Moles were outstanding and paired with the duck, best ever. The chalupo with fresh and dried fruit was both sweet and savory. A unique dish and recommended. Our server Julian was outstanding!

    Sazon is one of the top restaurants in Santa Fe. Service is exceptional. Food is unique and fantastic. If you are visiting Santa Fe, this is one restaurant to try. Make reservations early since it fills up in advance. Probably not a good location if in a wheelchair, although I believe there is accessibility in the rear of the restaurant. In a city known for its restaurants, Sazon is at the top.

    I normally would give this restaurant a five star. I guess we just had an off night. Too noisy, too busy and attention to us was lacking. All dishes amazing except my husbands who we were out celebrating his birthday. This was my favorite restaurant in town but…. Didn’t work out great this evening.

    Sazón is a fun restaurant- the decor is colorful and bright. The food was excellent. They have an interesting way of pairing 5 moles with your protein. They bring out 5 sample moles with a tortilla and the waiter had us taste and explained the concept. What pairs best but you can customize it however you like. I loved this and I eat out a lot but never ran across this before. My husband and I had a delicious meal. My only criticism is the waiter really upsold us. He pushed us on a soup between courses and said an appetizer for each is best he said the portions aren’t big he also offered still or sparking water never said tap water. I know it’s a little thing but it bugged me when I heard it offered at another table by a different waiter. The portions are big and I have a healthy appetite. We ended up sharing an appetizer and salad and we had 2 entrees. That was a lot of food. We had no room for dessert. I would definitely recommend this restaurant but I was a little annoyed by the upselling. I love when the waitstaff guides you but looks out for you too.
