El chef Fernando Olea, ex chef de Epazote y oriundo de la ciudad de México, ha cautivado a los comensales en Santa Fe desde 1991. El chef Olea crea sabores sofisticados utilizando las tradiciones indígenas y culinarias del antiguo México, junto a ingredientes de todo el mundo. Su menú es deliberadamente reducido y está elaborado con productos y carnes locales frescas siempre que estén disponibles. No hay nada como el mole mexicano para evocar el misterio de la gastronomía mexicana, con su salsa de sabores complejos que generalmente se prepara con especias tostadas y molidas, semillas, nueces, chocolate y chile. Muchas recetas de mole contienen más de treinta ingredientes y algunas de ellas se elaboran con cinco variedades de chile. El chef Olea se complace en compartir sus moles, entre los que incluye a su "Nuevo Mole Mexicano" que creó en 2009 con motivo de la conmemoración del aniversario de los 400 años de Santa Fe. El gran mural ubicado en el salón comedor principal, fue pintado y presentado al chef Olea por Federico León de la Vega, un conocido artista de la Ciudad de México.

Overall a very good experience but there were a few issues. We felt that there was a little too much theater with regard to the food explanation with an emphasis on pushing certain items. We ordered one bottle of still water and a second one was served quickly without asking us if we wanted more even though are glasses were still at least half full. The signature soup was delivered with our appetizers at the same time. With fine high end dining the soup should have been served as a separate course so that it would be at its optimum state of temperature and texture.

Sazon is always a special treat with everything ordered delicious, beautifully presented, and served by an excellent staff. Sazon offers a range of dishes that are unique and always leave you in awe of the inspiration and execution. Chef Fernando Olea, always watchful and engaging his guests, adds to the warm and inviting ambience.

The service was impeccable. The food was innovative and delicious. A truly unique dining experience. The Sopa de Amor was fantastic; I have not tasted this unique blend of flavors before. As a vegetarian option, the stuffed eggplant is not to be missed. We will definitely dine here on our next trip to Santa Fe.

The food was superb. The service was attentive without being intrusive. Wait staff were knowledgeable about the food and about wine pairing. Overall, this was the best experience I have had at a restaurant.

We love Sazon and Chef Olea. He always stops at our table to chat and make sure everything is perfect. We had Jordan last night and his service was excellent. A+++ all around.

Wow! I wanted to treat myself while in town training for the week and my what a treat this was! The food was interesting and delicious and made me pause and have gratitude to be able to enjoy such a luxurious meal. Staff were attentive and knowledgeable about the menu. I see why this place has received the accolades it has...well deserved!

The food and service were both excellent. The best and most variety of mole sauces! Creative delicious dishes served by informative, friendly and efficient staff. Our only concern was the seating. We were in a small long room not much wider than a wide hallway. Our table for 2 was very narrow and the room was very warm. In this way, it was a very different experience than the last time we dined here and were in a larger dining room. Perhaps request specific seating.
