Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

We try a new restaurant in Santa Fe twice a month. It was challenging to get a weekend reservation but worth the wait. Made another reservation for Sazon at the end of our meal. Enjoyed talking to Chef, and his recommendation was perfect. Looking forward to sampling additional items from the menu next month. Our meal at Sazon was in the top 5 best meals we’ve ever had worldwide.

Literally out of every restaurant we’ve ever been to this was by far the best! The tequila tasting at the beginning and meeting the chef/owner was incredible. What he does with layered flavors and hints of chilies in every dish is indescribable!

In Texas, we have a saying... All hat and no horse... well that is exactly how Hubby and I felt at this OVER rated and UNDER performed restaurant.
Hubby and I took a trip to Santa Fe to celebrate his birthday. We were excited to try Sazon, and I made a reservation two months ahead of time. When I made a reservation, I noted the birthday celebration. There was no acknowledgment of the celebration despite us witnessing an adjacent table having a complimentary dessert with a birthday candle.
There is NO parking around Sazon. You will need to park in the paid municipal lot a couple of blocks away. When we arrived, Chef Olea checked us in, but we had to wait about 20 minutes despite the reservation. The host came out asking for my "reservation number" and NOT my name... ummm, sure, I memorize that number. First impression, I am just a number and not a person.
We sat down to a wobbly table that I had to ask the server to correct twice with rolled up paper napkins. This is what you would expect Taco Bell, not a "fancy" restaurant.
Service was incredibly SLOW and the server tried to UPSALE us on everything from drinks, appetizers, main course, and dessert. After someone else brought us the food, we never saw our server again... maybe because we declined all of the upsale suggestions.
The food was ok, not memorable enough to recommend or return. The zucchini blossoms lacked flavor without the sauce. My duck breast came with a sweet potato puree similar to baby food, and some type of fried noodles were placed on top because of the weird texture. Hubby's deconstructed enchilada was meh.
Chef Olea with his hat and no manners... ahem... I mean, horse... made his way through the dining room and stopped at each and every table EXCEPT ours. It was incredibly RUDE and DISRESPECTFUL since we just paid $50.00 for each plate.
For the price, this place is not worth it... poor service and mediocre food.
Well this is certainly worth the effort to secure a reservation. The owner treats every customer like family. The food is terrific.

Just marvelous food, unique and flavorful. The setting and ambience could not have been better. OK, despite the quality, it is maybe 20% or so higher in price than I feel was justified, but still, clearly the place to go for a special meal in Santa Fe. Octopus appetizer was delicious. The Simfonia Dulce ice cream was unbelievable. The moles are all delicious.

This is our second visit to Sazon, and we were very anxious to return. First of all the food is divine and the menu is very creative. Oh, and the plates are presented beautifully. Then there was the white Sangria, which I had never tried before. Fabulous. (I usually find red Sangria too weak or watery). My husband had the red and was equally happy.
The wait staff is as professional as any you would find in a big city restaurant. They explain everything, have recommendations, and are there to make you happy....which we were!
A wonderful touch is that both times we have visited Santa Fe and have eaten here, three years apart, the chef visited the table and chatted a while with us.
The high point is the food, however. It is just DIVINE. (Try the salmon in phyllo dough with corn truffles). Nothing else I need to say.
Loved learning about and tasting all different kinds of mole sauce. I thought I didn't like mole until Sazon opened my culinary eyes!
Saxon means “seasoning” in Spanish. It’s definitely a good name for this wonderful restaurant. You start with a selection of 7 mole sauces, and the idea is to figure out which one you want on your entree. They range from Spicy to Mild and everything in between. We were 4 at our table, and we shared 2 servings of the squash blossom appetizer. It was fantastic - unlike any squash blossom dish I’ve ever tried. I had the duck breast with Poblano mole sauce, and it was delicious. They have a special dessert that’s a small serving of ice cream with multiple-layered seasoning. I won’t tell you the end of it, but suffice it to say that it’s a surprising flavor with ice cream - but also delicious.
I highly recommend this wonderful restaurant. Service was wonderful, and the waiters stopped to interact with us, which is a luxury, given the current shortage of restaurant staff. Try it -you’ll love it!

The entire experience was exceptional. From the delightful and powerful artwork, to the service and food. All on point and worth the price. We had regular visits by the chef as well who was very accommodating to our two children. The drinks were dynamite. Our waitress was never far away, very attentive and engaged. The dishes we had, from appetizers to entrees were exquisitely prepared. This is a place I highly recommend.

One of the best meals we’ve ever experienced with unparalleled decor. If you’re in Santa Fe, you must visit Sazón. The sopa de amor is a must have, with crema de poblano pepper, gran marnier, and grated chocolate. The mole tasting was a delicious treat as well. It is a true sensory overload. We celebrated our engagement there so it was especially sentimental. Truly a memorable evening and the service was impeccable. Our waitress Alicia was delightful and awesome!
Mediocre food other than moles. Poor presentations, sides were blah or odd. Example - white fish with rice, cauliflower, pale broccoli and pale green mole for $52. Noisy, close to run down. Very overpriced.
Issue with seating when we arrived. The salmon dish lacked flavor. Service was good, but not extraordinary.
