Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Tasting menu. Don’t do it. Wine pairings included some absolutely undrinkable Baja California Syrah. Please chose a $3 bottle anywhere. Other wines were not as terrible from the same winery but still bad. Food. Some courses were excellent. Soup of love, camarones, avocado ice teas which was serve as first course as a palate cleanser PRIOR to the meal??? Just put us where is belongs. Great desert. Duck was overcooked. Those that thing chocolate mole will save it — it does not. Halibut was ok again saved by the sauce. Overall SUPER EXPENSIVE AND NOT WORTH IT

    One of the best meals I've eaten in some time. The Sopa is easily the most flavorful soup I have ever tasted. It's a must try. Order an entree with a chef recommended mole. Order any dessert. They will all leave you satisfied. The service is the absolute best in Santa Fe. The environment is cozy and lively. Sazon is the one restaurant you must visit when in northern New Mexico.

    Had the most amazing meal ever at Sazon is week. We can not say enough about this incredible place. The food was phenomenal and the service was outstanding. Definitely a special occasion place for locals like us, but it was one of the best meals I have ever had!

    That was an amazing dinner. So very good. Everything we ordered was wonderful. Special kudos to pork tenderloin with favorite me sauces and the Cholula. Can't wait to return.

    We enjoyed our evening eating this delicious meal. We started with the 5 different flavors of the chefs’s mole and then you chose your favorite Starter- Sopa de Amor Chef Olea's signature soup Dinner was the chocolate mole with the Halibut And dessert- Dulce Sinfonia Chef Olea's signature dessert. A masterpiece of flavors and textures All was superb and I high recommend!

    A authentic and delicious dinning experience that began with a tasting of various moles and ended with the most incredible dessert dishes I've ever tasted. Dining at Sazon was a 5 Star experience with Fernando Olea. Congrats to James Beard winner for best chef of the southwest 2022. Absolutely enjoyed the romantic atmosphere. A must to visit.

    Please try the Soup de Amor. It’s divine. We went twice and had the duck and the chef’s special with pork veal, beef, nuts and dried fruits. It was amazing.

    the moles are amazing. some menu items equally creative. however, the experience was not up to expectations, especially considering the prices. first, the service was overly "attentive" to the point of being intrusive. we went to "dine", but felt from the first that we were being moved through to clear the table in our allotted time. second, the food. halibut was great, if pricey. rack of lamb had nearly no meat on it. the duck seemed a bit overcooked. finally, the chef selects the accompanying vegetables for each plate.... hard to get excited about cold beet strips. overall, mixed reactions but bottom line, a lot of money for a disappointing experience.

    Amazing unique experience at Sazón. The Mole tasting was such a nice touch! The service was impeccable and they went above and beyond to make us feel special on our anniversary. An absolute must if you’re going to Santa Fe! Genuinely one of the best dining experiences we’ve ever had.

    Other than having to wait 30 minutes after our reservation to be seated, the experience was wonderful. Food and service were great. The prices were very fair for an incredible meal. The moles were to die for!

    We went here for Thanksgiving Weekend Dinner, it was by far the best restaurant we have been to in New Mexico. The Mole Sampler Appetizer was unique and delicious. Must go!

    This is my second visit in 16 months. The first was excellent in every way. This visit was very uneven. Appetizers did not disappoint but entrees were heavy, unbalanced in flavors and poorly executed. I sent my meal back and was credited the meal. Servers are well trained but stretched thin in offering attentive service. I am bereft that this great restaurant is performing so poorly.

    Wonderful dinner at Sazon. The cocktails, mole samples, spinach salad, soup, and dinner were excellent. The shrimp enchilada was fantastic. We will definitely be back.

    We found Sazon to be an exceptional restaurant. We loved it from the moment we walked in. Great ambiance, inspired food and attentive service. You can feel the care and love that is put into every dish. We want to return for the tasting menu next time. Can’t wait for our next visit to Santa Fe.

    We really like the food here and the drinks are usually fabulous. We had a dining room reservation but we were seated in the middle of the two top area at a table that was not very wide and was quite uncomfortable. We asked to move to the bar and ended up seated there. It wasn’t as pleasant as being at a dining table and the service was spotty because the bartenders are focused on making drinks. I love the black bean soup but this portion size has shrunk considerably from what I remember. That was disappointing. Give me at least a cup of soup and charge me more if you have to. I hate skimpy food that doesn’t have to be.

    We were so happy to get into Saxon, since our last two attempts failed. Food was fabulous, Isaac our server was very good for only being there 8 weeks. We are restaurant people, husband owned 22 restaurants for 35 years and I trained servers and ran the front of the house for several restaurants in Pennsylvania. We firmly believe service fell off near the end of the meal, because poor Isaac was given to many tables . That is not his fault but the manager and or host. Food was outstanding and Congratulations on the James Beard Award, but look in house to correct issues. We felt all servers seemed stretched.

    It was my husband’s birthday and we chose Sazon on a recommendation from an employee at Trader Joe’s. Our neighbors joined us for a lovely meal. We had to wait for our table. The wait wasn’t too long but the entrance was very crowded. The paintings and murals on the walls were wonderful. Very Mexico/New Mexico. Dinner started with individual portions of 5-6 different moles, from chocolate, apricot, and variety of chiles. The special margaritas were delicious. Between the four of us we tried a variety of appetizers, soup, and salads. This is a difficult review to write and list specifics because everything was excellent. The flavors and presentation superb. Our entrees were stuffed eggplant, halibut with apricot mole, fillet, and shrimp enchiladas. My husband mentioned how good the shrimp enchiladas were (this was not what you think of enchiladas) several times. Desert was comped for my husband. Excellent dinner and lovely evening. We will return as soon as we save up again. Thank you James Beard award winning chef Fernando Olea. Note: credit card needed for reservation and 2 day cancellation policy.

    As the former Owner of Florida's best restaurant, where the Chef from Paul Bocouse , a Michelin 3 star, prepared his 6 course tasting menu (degustion), I can assure you that you won't be disappointed in any area. Hard to say if the food taste, presentation, ambiance or service was better. They are all magnificent.

    The food and service were excellent The food was very inventive and the staff was extremely attentive. The chef was very hands on. The most impressive aspect was that when 2 out of 3 of our entrées came out slightly overcooked, they insisted on removing all three entrées, treated us to a wonderful soup to fill the time, and replaced all three entrées perfectly prepared. It was a wonderful dining experience all the way around. We will definitely be back

    Sazon is always amazing. One of our favorite restaurants and one of the best restaurants we have ever been to. Chef Fernando is a true culinary genius and an artist at creating flavor masterpieces. With the beautiful artwork on the walls, it is like dining in an art gallery. And, the service and ambiance are always impeccable.
