Maximilien and Thomas: A Shared Passion for Gastronomy in Paris

Trained at the prestigious École Ferrandi, Maximilien and Thomas came together through their shared love of hospitality. Maximilien specializes in wine and guest experience, while Thomas refined his culinary skills at Le Pré Catelan and Lasserre. In 2022, they opened Nessia, a modern French restaurant in the Marais district of Paris 3, near République, which is also available for private events. Nessia offers globally inspired, contemporary cuisine, highlighting premium meats while also providing vegetarian options to satisfy all palates.

Le Cinq unveils itself behind two majestic wrought-iron doors. In this room with a classic Franco-English style, where excellence serves emotion, chef Christian Le Squer shapes a cuisine of products, modern, elegant, and constantly evolving. A distinguished culinary composition of the highest accolade, as Le Cinq has been awarded 3 Michelin stars since 2016.

Centered around seasonal ingredients sourced from small producers, the menu reflects the chef's Breton roots and Parisian inspirations. Among his signature dishes, Breton langoustines, gratinated onion soup, or line-caught sea bass with buttermilk from my childhood are must-tries. An explosion of tastes and flavors.

By his side, his accomplice Eric Beaumard, the iconic Restaurant Director and vice-world's best Sommelier, orchestrates high-flying service and supervises the cellar with 50,000 bottles that has made Le Cinq's worldwide reputation.

Located just a stone's throw from the Hôtel de Ville and the Marais district, Le Coupe Gorge restaurant, with its antique parquet flooring, dressed stonework and red velvet banquettes, exudes the flavour of old Paris and the pleasures of fine dining. The restaurant was founded in 1895 on rue de la Coutellerie, a street that owes its name to the many active cutlers. Its current name is more recent, no doubt due to the offbeat humour of one of its previous owners! Far from being a trap, Le Coupe Gorge offers a warm atmosphere, typical of old Parisian establishments, and a friendly welcome.
