El chef ejecutivo y copropietario, Pino Coladonato, creció en una granja de Puglia. Allí debía comer lo que había, pero pronto se cansó del puré de frijoles y decidió ocuparse él de la cocina, ideando nuevas formas de utilizar los mismos pocos ingredientes. Ahora, aunque tiene ingredientes ilimitados para elegir, las habas, los garbanzos y las lentejas siguen siendo un elemento central en muchos de sus platillos principales. El diseñador de interiores Libby Langdon ha creado un ambiente cálido y acogedor en el salón comedor. Es un estilo rústico y relajado, con el encanto del Viejo Mundo.
