Santo is inspired by Chef Hosea Rosenberg’s childhood home, Taos, New Mexico. A full-service restaurant serving his spin on seasonal, modern Northern New Mexican fare; Santo brings to life the vibrant eating and drinking culture of the region with authenticity. Written in collaboration with Chef Arun Moghe, the menu combines classic cuisine - regional spices, chiles and techniques - with a local and all- natural approach to sourcing meats and produce.

Santo features a warm dining room, outdoor patio, lively bar, and an open kitchen. We are able to accommodate parties of up to 8 guests. Please contact the restaurant if you have a larger group. Patio tables are available on a first come first serve basis, but may not be reserved in advance. We will do our best to fulfill requests upon your arrival.

We love Santo and usually love the service and great food. This particular time the server was off her game and the kitchen was missing a few beats. No posole in the the posole and no carne adovado as ordered? Food delivered to wrong table and no one really asking if food was satisfactory. They did comp the posole but we hope the off day is an exception to this place.

Santo is not inexpensive but you get what you pay for. The food menu is short and to the point. Covers New Mexican cuisine very well. Enjoyed the paella with a fried egg on top. Really well seasoned and tasty. Chips and multiple salsas are fantastic. Enjoyed Tommy margarita as well. Recommend for sure!

We were outside, so I can’t speak to the noise level inside, which is generally pretty loud. . Our server was great. Love the food s d the summer drink menu.

We had an awesome meal! I had the corn enchiladas and my husband had tacos. They were amazing! The green rice was really wonderful side as well. Server was super attentive and friendly. The tables are close together so on a Friday evening it was a bit challenging to have a conversation but we'll go back and either opt for outdoor seating or a quieter time.

As new residents we'd taken off on a Saturday bike exploration with nowhere in particular in mind. Once we had a destination (Wonderland Lake) we headed west. We soon decided to grab a bite to eat & drink before heading home and searched for nearby places. Santo came up and was a close ride toward central Boulder and we were interested in putting directions together from our biking perspective. As it turns out, we'd driven by the plaza Santo is in twice (once by accident) without even knowing. It was meant to be that we landed back there! The food was great, the service was wonderful, the beer was cold and the view (I was facing south) was just what my heart desired! We will definitely be back.

Wonderful food. Thoughtful, well seasoned, interesting ingredients. Just love this place. Service does them proud as well—almost as good as at Blackbelly, and they’ve had five years to figure it out.

We eat at Santo every chance we get and I've tried most dishes on the menu, including specials. Santo is one of the few restaurants where I've honestly never been disappointed. I certainly have my favorites, and have dishes I like more than others - but even my least favorites were thoroughly enjoyable and I walked away satisfied. Also great value for the quality and service is always outstanding.

Food was excellent, waiters were kind and attentive. They even gave us free dessert since it was our anniversary! Only drawback is that the seating was not very private. All seating was in two rooms and there were no full booths.

Presentation was fantastic, service was great, but unfortunately food was really lousy. I really like good food, and don’t mind paying for it, but food was just not good. Five of us ate dinner and all five ordered something different from the menu and none were even close to great

While the food was good it was severely overpriced. I love the idea of locally farmed food and I want to support that but even with that in mind it seemed too expensive. The server was a bit more hands off than I was looking for. Would go again, but only if I didn’t have to pay $8 for 3 tablespoons of guacamole.

We enjoyed a birthday dinner at Santo and enjoyed the taste of northern New Mexican cuisine. As native southwesteners, we are familiar with the menu items; the tostaditos were very crisp and tasty, the beans were a bit tough, the lengua taco meat was excellently prepared. The starters left a lot to be desired: the jicama was just a stack of sticks with a small sprinkling of a red powder - the taste was indistinguishable. The meal was enjoyable and we liked our waiter who was personable and responsive.

First time having brunch at Santo after several excellent dinners. Very disappointed. Bloody Nary was served without vodka and had to be corrected. No idea how this happens?? Despite restaurant not being busy food took a long time to get to the table. And when it did it was not worth the wait. Blue corn waffles were soggy, posole arrived lukewarm at best, maple syrup not heated. On the plus side Enchiladas and omelet were both quite good. Overall not worth the wait or price. Overrated brunch. Will stick with dinner only.

We came on a Sunday night. The service was outstanding. Very attentive and helpful without being intrusive. We liked the location and setting, with a nice view of the Flatirons. The food was good, overall, but I found the Bluecorn Enchiladas only ok. The seasoning was inconsistent and parts of the bluecorn tortilla were either soggy or alternately crunchy. Seemed like it might have been sitting in a warming oven or under a heat lamp for a while. We will come back.

Since I only give 'outstanding" to unique, high-end restaurants this place deserves an excellent rating for its cocktails, appetizers and all four entrees ordered. Service was informative/well explained to any questions that were asked, the server gave us plenty of time to decide, and though the place was bustling we did not feel rushed. Definitely worth a revisit the next time in Boulder.

We had an amazing Sunday brunch at Santo. The smashed potatoes with tongue were delicious. The fry bread Benedict was outstanding, especially the hollandaise with Christmas chilis!

Friendly staff, delicious food, and unusual but delicious drinks! They probably (unexpectedly) have one of the best burgers in boulder. We also had the half chicken, hanger steak, chips and queso and long ham special. Everything was delicious. We're definitely coming back.

We had a really nice evening at Santo - we arrived early so we could have a drink and the bar staff was very helpful and knowledgeable. The food was excellent, the service a bit hit and miss, everyone was very nice but they seemed a bit stretched and it took a while for our food to come. I would go back without hesitation - the menu was really good and I would like to try some of the other dishes.

Santo has quickly become our favorite place to eat in Boulder. Previously we'd frequent Mateo, Brasserie, or the Med. The food is as authentic as New Mexican food can get (and it's really good), the servers are well trained and take great care of you, and the environment is nice and relaxing. With the warmer months coming around, we very much look forward to dining out doors on their large patio which has a great and unique view of the Flatirons.

We didn’t get our server for a long time but once we did she was great ... food was ok except for mine I got the ribs and everyone at the table said they had absolutely no flavor ... I love the location and the menu but in general I’m almost always disappointed either by the surly inattentive bar tenders or the slow initial service or the food :((
