About this restaurant

Opened in Steamboat, Colorado in the spring of 2014, LOW is a heartfelt homage to the best in Southern cooking. Bustling and bright, the restaurants reflect the spirit and passion behind America’s “favorite” food. Owners Katy and Brian Vaughn grew up in the South and have been known to get a little homesick from time to time so they decided to bring a little down home to the higher elevation of Steamboat and opened LOW. Met with rave reviews, they decided to expand LOW to Denver in 2017 in the Lower Highlands Neighborhood. Chef Brian Vaughn has created a food and beverage menu in both locations that combines time-honored Southern cuisine using only the highest quality of ingredients. The result is genuine hospitality, serious drinks, and the best fried chicken you have ever sunk your teeth into. We promise.
