Colt and Gray is now closed. It was very disappointing to make New Years Eve reservations and find out the restaurant had shut down upon arriving.
It is with regret that Colt & Gray is closing. Having been there various times over its existence, I have never had a disappointing evening or meal. I am sorry that they are moving on. Hopefully they will find a future that works for them.
I have been to Colt and Gray numerous times in the past and have loved it. I hosted my employees to a holiday dinner and while our server was cordial in the beginning, by the end of the dinner, he was incredibly rude. While yes, our dinner did last over 3 hours, there were tables surrounding us that were open so we knew we were not holding up the table. We had apps, cocktails, bottle of wine, dinner and dessert so the tab was certainly worth while.
We felt the rush when the busser tried to clear my entree (cioppino) when I still had plenty of seafood left. Our server dropped off the check and not long after, came up and ASKED if the check was ready. I replied that I hadn't looked at it yet. He came up a second time and asked so I looked at him and asked 'Do you need to leave?' thinking that his shift was over. He said no.
When he ran the card and came back to the table, he dropped it on the table and walked away. Not in a dramatic fashion but certainly with an attitude. He didn't even offer a curt 'thanks'.
What was supposed to be a celebratory end to our company's year was completely tainted by his attitude and we all left with a bad taste in our mouth. Being from the hospitality industry and being the holidays, I still tipped him 15% (normally I always do 20%) and I wish that I hadn't left that high of an amount.
At the end of the day, there are plenty of restaurants in the downtown area with amazing food and fabulous service. The price is certainly not worth it if the service is this unpleasant.
I do want to note that the bartender prior to our dinner was fabulous.
Fabulous as always. C&G is one of my absolute favorites and I will miss it so very much. Thank you to the Chef Nelson and the wonderful staff for so many amazing memories. You will be missed.
Just a miserable dining experience, the manager was trying his best, but his staff was completely checked out. Probably best they are closing the property. Run it’s course.
Probably the WORST service experience I have ever had. We were not met by our sever until 30 mins after being seated. He did not bring us any of our meals and had bussers bring them. And yes they were busy but not enough no neglect a small two top for us. All portions were small and very overpriced. Though the food was good, all other aspects were lacking severely. I heard good things and wanted to go because they are closing soon. If they were staying open I would never go back again
I'm hoping this is just because it's closing this coming weekend and they were shorted staff this past weekend when we went to dinner and not how the service has been the entire time it's been open. The food was overall okay, but the service was so slow. It took us over 2.5 hours to eat dinner. The broccolini was cold on my plate when my main entree arrived and the bone marrow was so hot that we could barely use our fingers to hold the bone to get the marrow out. The space is very beautiful, but a curtain at the front door should have been installed since the one table near us kept constantly changing couples who wanted to move since they all kept getting cold. Overall, very underwhelming and worst off St Ellie's was holding a private event so we couldn't even get a yummy drink after dinner. Oh well.
While I would definitely recommend Colt sadly, it is closing on 12/21. We had to
make a last-minute dash to get the best sticky toffee pudding in the world. Farewell Colt & Gray.
Terribly sad that Colt & Gray is closing. Our waitress, Alex, was simply phenomenal. She made an already great experience perfect.
The food and ambiance are wonderful and we are really going to miss Colt & Gray when it closes in a couple of weeks! I hope they reopen elsewhere.
This is a great please come and have a wonderful meal with family or friends. True an amazing food experience.

Quality of the food is the highlight and would happily eat it over and over again. Value is something they seem to be working on - having gone last year it seemed pricey for what it was. Much better now. Service was definitely the lowlight unfortunately. We’re decently relaxed diners, but once we placed our order we had to ask for the waiter to be sent over three times because he never came back! When we were done it took over 30 mins just to pay and get out of there, leaving a bad taste.
What food we had was decent: bone marrow app good. Salad needed salt, pumpkin ravioli under done. Service so bad we left after that.
I was VERY disappointed with our overall experience. The service was inattentive and slow and the food was below average. We started our night by ordering drinks. We waited nearly 30 minutes before receiving our drinks with no interaction with our waitress. We had to ask the support staff to track down our order. We eventually ordered an appetizer and had intentions of eating dinner too. However, this too was taking an exceptionally long time. Our waitress was still nowhere to be seen. We finally cut our losses and told our waitress we wanted our check. We will not return.
Food took over an hour to arrive with no apology. Only explanation was "Chef likes to take his time with vegetables." Table next to us arrived 20 minutes after us and were on to dessert before our entrees arrived.
Colt & Gray is a hidden gem and one of my very favorite restaurant AND bar in all of LoDo or the Lower Highlands. I’ve been coming here at least once a week for 6 months now, and I can’t stop raving about the service, the food, the ambience, and the creative cocktails.
Corey and Dwight are my favorite bartenders in Denver. Engaging, charming, and always at the ready with a great drink suggestion. The bar is surprisingly well stocked, and Dwight can tell you the story and reason for every bottle he keeps in stock behind the bar.
As for starters, the Charcuterie is my favorite in Denver. All meats are cured on site with their own in-house butcher. Personal favorites of mine are the coppa, speck (similar to proscuitto), and the duck proscuitto. The steamed mussels are presented in a perfect broth, and the beef tartare is among the best I’ve encountered anywhere.
The BBQ duck breast is truly outstanding, but it’s the steaks, expertly butchered one-house, that have me coming back for more. Nothing beats their ribeye with a side of the rosemary potatoes.
While I’m not ordinarily a dessert guy, the Food Network did do an episode highlighting the sticky toffee pudding at Colt & Gray, snd for good reason. I’ve recommended it to many a fellow diner at the bar, and without exception it’s been a favorite to all.
If it’s a romantic date night, request a table in one of the alcoves, or perhaps grab the two club chairs in front of the fireplace. As for me, I enjoy dinner service with Corey and/or Dwight at the helm. After dinner and drinks be sure to check out their sister property, St. Ellie, a cozy modern-day speakeasy, conveniently located downstairs
Awesome place! The food was great, we just wished there was a touch more variety. Service and ambiance were even better. We'll be back.
The waiter and personal service was outstanding, but the filet came out pre-cut and cold. I don’t expect a 10 oz filet at a high end restaurant to come out already cut. I want it sizzling and cooking in its own juices. Besides that everything else was nice.
This place never disappoints. Excellent experience on all levels.
I would recommend it for a quite nice evening out, but not if you're on a budget. The bar menu and specialty drinks were wonderful. The main courses were pricey and the duck was overcooked. Very disappointing for a restaurant of such stature, however, the pork chop did not disappoint. It was perfectly cooked and spiced. The wine list was not what I expected as well, however, the I did find something I enjoyed within the limited selection for by the glass. Overall a nice job by the staff and chef, but it didn't knock it out of the park.

This place was extremely overpriced and I would not recommend it to friends. We eat out frequently and at places where the bill easily exceeds $125 but this was just ridiculous $60 for a filet?! That better be the best filet I'll ever have in my life. $50 maybe, but $60? No.
Service was fine but the servers seemed a little spacy. Food delivery of both appetizers were 20 minutes apart and we were not sharing them. The host was chilly and barely said hello before checking us in.
Poor sear on the sweetbreads. The duck was chewy but the bbq sauce was interesting. It was better than the lamb which was boring and underseasoned.
Didn't feel like sticking around for dessert. Good Zin wine though- maybe $14ish? Interesting.
Amazing experience this past weekend. Service was a tiny bit slow at times but we overall had a wonderful time and we will for sure be back. Excellent bourbon selection as well with fair prices.
Food wasn't very good. Two of us ordered the pork chop which was too fatty to even eat most of it.
We are very disappointed. We have gone here for years as "our place" but that will be ending after this last experience. First, the waiter was great, no complaints there.
However, we made a reservation and it was clear that really didn't matter since they first tried to seat us at a high top which I clearly selected "no high top" in the reservation and it was obvious they didn't know where to seat us. In the past our reservations always had a specific table already prepped and waiting specifically for us.
Second, they apparently have gotten a new chef and the food is not even close to the quality or value as it was before. They used to have this amazing chicken we couldn't get anywhere else. Now they give this pathetic sized chicken with about 4 mini potatoes and that is it. The quality/ taste was average, over all it wasn't even worth half the price.
Lastly, the music was too loud.
If anyone knows where the prior chef "Nick" went, please let me know.
We had such a good time here! The service was awesome, all the food was mega delicious, and the bartender/som(?) made some really wonderful wine recommendations.
I had been a touch worried that this place was going to be a bit stuck up (as many nice restaurants are, unfortunately). But there was a nice amount of humor on their cocktail menu (it was Parks and Rec themed)! And the staff were very warm and welcoming.
Pro-tip: Even though it sounds weird, the toffee pudding dessert was the best dessert I've had in a LONG time. You have to get it.

Excellent service, food, and atmosphere. This is an underappreciated, thought somewhat pricey restaurant.
We sat outside on a nice evening so I can't comment on noise level inside. Was very nice, and food and cocktails were interesting and tasty. Service outside might have been a little slow as it looked like they were covering inside as well. But overall a very nice experience
Great meal at Colt and Gray. We had the pork chops and duck with a nice bottle of wine.
Disappointed. Service was inattentive. Some meals arrived cold. Prices were high and not reflective of quality. The restaurant had declined significantly since my last visit.
Was very good, and not disappointed, but would say overall 4 out of 5, with the exception being Ricotta pasta dish and Pork Chop were wonderful.
Colt + Gray was amazing. There were pop culture themed cocktails which gave the restaurant a fun vibe—not to mention they were delicious! Our server was knowledgeable and provided great recommendations for the meal. The food, was obviously delicious. Highly recommend for a more special occasion since the food is a higher price point.
We have been here for special occasions many times. The fact that we celebrated those here in the past is what has kept us coming. In this last visit, we definitely felt that the place needs to be refreshed. Move stuff around. Repaint a wall. De clutter some stuff. Make it feel new and intentional again. There’s a lot of competition in town, so you have to step up the game and lower the price point to stay interesting.
The food here is phenomenal. I don’t know what they did but everything tasted on point. I have no idea what they did to get the dry aged ribeye so flavorful, but it works. The facilities could be a little nicer.

Nice dining room, excellent service, fantastic house made charcuterie. Every aspect was top quality. Good selection of wine by the glass, beer, excellent cocktails. Highly recommend.

Not the best experience I’ve had, certainly not the worst. Nothing was particularly good, but nothing was really bad either. Average, sums up Colt & Gray.
