    I can't say enough good things about The New Sheridan Chop House. From the food, drinks, service, staff, the atmosphere, is all so amazing!!     I love sushi. But, sushi in the mountains, 9000’ elevation, about as far from the ocean as you can get? $200 (+ drinks) per person (for the omakase)? What could possibly go wrong? I admit, I was prepared for disappointment. Well, it was delicious. It was imaginative. It was visually striking. The progression, textures and proportions were carefully considered. The service was excellent. Good sake selection. The sushi chef is quite skilled - clearly a cut above. Friendly, too. An outstanding birthday dinner.
