Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began.     Our first return to the Pink Adobe under the new ownership. First rate all around. My Steak Dunigan was charred on the outside and a perfect medium rare on the inside. My wife totally enjoyed the salmon. Our inside table was quiet and away from the noisier patio. The service was top notch, start to finish. The Pink Adobe is back on our favorite dining out in Santa Fe spots list.

    Excellent tapas (try the grille artichokes). Wines pair well with the food and are reasonably priced; I especially recommend the dry sherries. I've been there several times and the servers have always provided good advice on both the food (quantity) and wine. It's one of my go-to restaurants in Santa Fe when I'm not hunting for green chili.

    One of the best meals I've had in Santa Fe. Geronimo's is always a favorite - always expensive - and always nearly perfect. My husband had fish and I had beef. Both were excellent. My only issue is that WHY DO THEY SERVE EVERYTHING IN A BOWL. It's quite a pretense and actually makes it harder to eat some things! Also - the valet parker was obviously high and extremely irresponsible! While he was wallowing in his stupor, I waited over 10 minutes for him to get my car. He just kept turning his back on us and doing nothing!

    Beautiful patio area and I had an amazing burrata salad. Not many vegetarian options beyond a pasta and starter sized salads. My partner had the beef Bourguignon which was lovely but oddly heavy for a patio meal in the summer.
