Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Enjoyed our visit to the La Plaezuela ATT the La Fonda Hotel in Santa Fe ! The food was good and the service was amazing! It was very busy but the noise level was not bothersome! We had the half chicken and Cjilie Rellanos! All very flavorful ! The drinks were better than average than we’ve had elsewhere in Santa Fe. Overall affordable! We will return!

    Beautiful restaurant w large paintings of the leaders of the Mexican revolution. Service was great as was the food. Only downside was the loud and obnoxious party sitting at the four-top next to us. The stuffed squash blossoms were to die for — absolutely amazing flavor. The sopa de amor was incredibly good and not to be missed. Our waiter was amazing and service was excellent. We’ve been coming to Santa Fe for more than 25 years and can definitely say the Sazon is one of the best restaurants in the city, well deserving of its reputation for delicious and inventive Mexican cuisine. We can’t wait to go back for another meal.

    There seemed to be a completely new team working the front desk and waiting tables. This group is MUCH better than the previous one. I eat there regularly and some of the service was becoming an issue.

    This is our favorite dining experience in Santa Fe, and we keep returning. I prepare a selection of tapas from the online menu, and then plan to adjust with daily dishes. Often, the unknown items are incredible. Plan to have the paella as the last dish (before dessert), and the portion for one is sufficient then for 2-3 people. Our waitresses had several excellent suggestions, and were very friendly. The dining room is small, so make a reservation ahead. The noise level is not excessive, and you will end up in conversations with adjoining tables - always great.
