He developed tasting profiles to secure a culinary team. Iricanin identifies the best dishes from each region throughout the Balkan Peninsula to include slow cooked items from the Northern region of Serbia, grilled specialties from Southern Serbia, as well as seafood specialties from the Mediterranean coast of Montenegro and Croatia.  Ambar offers a highly selective list of wines showcasing the Balkan region.  Over 80 wines are available by the bottle from Serbia, Macedonia, Slovenia, Bosnia & Herzegovina, and Croatia. A selection of six bottled beers, one from the Balkan region, is also available. Additionally, the libations at Ambar incorporate house-made infusions and fresh juices, which are made from scratch and prepared in-house daily.
