Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began.     We had an absolutely wonderful experience at Geronimo. From the moment we walked in to the moment we felt welcomed and cared for. Service was 10 stars. Our server, Dienke was helpful, knowledgeable and fun. All of her suggestions from the drinks to the dessert were right on. The food was 10 stars as well. The menu is interesting and the dishes we had were perfectly executed. We look forward to returning on our next trip to Santa Fe.     Lunch was wonderful. 4 diners each ordered something different from a diverse menu, and each was delighted with their meal. The food is outstanding, the environment is easy on the eye, gracious, roomy and comfortable, the service is impeccable. A great spot for a small or large gathering.

    There seemed to be a completely new team working the front desk and waiting tables. This group is MUCH better than the previous one. I eat there regularly and some of the service was becoming an issue.

    I wish I remembered our waitress’ name - as non-binary diners it meant a lot to be addressed as “folks” and not “sirs.” She was fantastic. The food and cocktails were as good as always.

    The seafood risotto was full of onion, which I have never seen in risotto before. Also, it was not creamy; just basically rice mixed with seafood and onion.
