Our menu is inspired by the Mexican regions of Yucatán, Oaxaca, and Veracruz. We strive to respect the influences and traditions of these diverse cultures to bring you food that is uniquely El Jefe. We believe in doing things the right way. Not because it’s trendy or cool, but because it’s right. We change our menu with the grow season, supporting our neighbors and the terroir of Colorado. We are not your average Mexican joint, rather a reflection of our environment and beliefs. We hand make our tortillas every day. All of our pork comes from one whole hog. Our chefs breakdown the whole animal, for chorizo, appetizers, stocks, soups, and entrees. Nothing is wasted. We do this out of respect for the animal and for the people who raised them for us. Anything we can produce in our kitchen is done by us, with love. No frills, just good food. We do an amazing brunch on the weekends, and by default or menu is nearly 100% gluten free.

    An oldie, but a goodie. Creative brunch menu that could accommodate various dietary preferences, including vegetarian and gluten-free. Enjoyed the pineapple spritz mocktail too. A touch loud that it was hard to hear conversation, but I just think it’s a tiny bit of an echoing space and when it’s full that’s gonna happen. I wouldn’t say the level of the music was necessarily the issue. Won’t hesitate to come back again just wish I lived closer so that was easier to do.

    I recently hosted my friend’s birthday dinner here and the staff were exceptional. They worked with us when we needed to add extra members to our party, and even made special arrangements with the kitchen to make sure that we were satisfied. The delicious food and drinks were also the perfect cherry on top. We can’t wait to go back!

    The owner, Marco, is incredibly hospitable and welcoming. The food tasted like it came straight from Italy. This place is the closest to the streets of Florence you can get in Denver. The Milanese-Prix (fixed menu) was an absolute dream… heaven in your mouth with each dish. The wait staff are knowledgeable and professional. The ambiance is warm, masculine, and romantic. I will certainly be coming back!!!

    Bruto was a dining experience unlike any other I’ve had anywhere in the world. Chef Byron takes your money and doesn’t waste a cent. Every bite and sip felt like I won the lottery. I couldn’t stop smiling, and I woke up today still smiling. It’s just amazing what some human beings can do. Look, it’s a serious place. Don’t go there to be the center of attention or to have a ripper roaring party. Go there because you love your senses and because focus, precision and intensity excite you. Bruto isn’t really about food, drink, service, atmosphere, sustainability or any one thing. It’s about throwing your soul into the void and finding that yes, there can be order wrought from chaos; yes, it is in fact possible to gently place a fingertip on the pulse of the universe and feel it relax and slow down. Can’t wait for the next season and menu change. Well done to all at Bruto 👏🙏❤️
