El restaurante La Masseria se inspira en las antiguas casas de campo fortificadas de la región italiana de Puglia, llamadas "masseria". El chef ejecutivo y copropietario, Pino Coladonato, creció en una granja de Puglia. Allí debía comer lo que había, pero pronto se cansó del puré de frijoles y decidió ocuparse él de la cocina, ideando nuevas formas de utilizar los mismos pocos ingredientes.
