About the restaurant
Walter's Bistro offers contemporary fine dining in Colorado Springs. One might not think exquisite seafood could be found so far from the ocean, but this eatery just minutes from downtown pulls it off very well with steamed mussels, salmon fillet and pan seared scallops, just to name a few.

While delicious seafood in the mountains may be a welcome surprise when visiting Walter's Bistro, there is plenty on the menu for the landlubbers. For example, the power lunch crowd will love the bacon wrapped meatloaf, 1/2 pound Wagyu bistro burger and the grilled bistro steak even if the seafood crepes do not tempt them. The dinner menu at Walter's Bistro includes Colorado white trout, Chilean sea bass, wild mushroom ravioli, smoked duck breast and osso bucco.

We have always loved this restaurant! It’s been nice to visit time and again to meet new staff and see a love of what they do over and over again. Austin has been our server on our most recent visits, and he makes our dinner service special and fun. The food remains luxurious, flavorful, and a true superstar among fine dining in Colorado Springs!

Italian
Colorado Springs
About the restaurant
Red Gravy offers upscale casual modern Italian fare.
Chef/Owner Eric Brenner spent his first decade in the industry inside Italian kitchens. Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18.
"We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input."
"Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Other examples include his St. Louis-style, thin-crust pizza, best compared to a flat-bread.

We are relatively new to the Colorado Springs dining experience and like trying new places. We heard good things about this place so I made reservations for my partner’s birthday. The name is very deceiving as I thought this was a high-end, trendy steakhouse. We were pleasantly surprised that it is a true fine-dining experience. Don’t expect quick service with a fast dinner/turn-around (i.e. don’t go starving and impatient). This is a course by course experience, and will be about 2 hours. The food was excellent, the drinks were tasty, and we will be back.
