Nudibranch began as a 2021 pop-up by Chefs Jeffrey Kim and Matthew Lee. In 2022, we opened our brick-and-mortar in the East Village. Since then, we’ve been featured in Esquire’s Best New Restaurants in America, The Infatuation’s Best New Restaurants in NYC, and the Michelin Guide. Our name comes from a scuba trip in Indonesia, where we encountered nudibranchs—tiny, vividly colored sea slugs known for their boldness and diversity. That spirit inspires our food: playful, creative, and full of character. At Nudibranch, we blend Korean and Spanish influences through seasonal tasting menus that reflect the diversity and energy of New York City.
