If this was a rating for a normal Sushi restaurant, perhaps I would give it a 5 star. However, I am rating an Omakase experience from what I was informed a Michelin chef.
The highs; decent service, clean environment and very creative course execution. 2 seatings with about 6-8 guests per seating is reasonable with one chef.
The not so high; Average meat quality, doubtful freshness of at least one of the items served, strange textures and very very poor and misfit desert consisting of a scoop of grocery quality green tea ice cream with 2 small pieces of strawberry garnish.
At $220 per person ($300 with tax and gratuity), the expectation should be high.
In conclusion, did not meet my expectation. Some others within the same price category in OC and LA gives a better overall experience.
Finally, a crew of 2 (including the chef) visible staff is not enough to provide the expected service level.
The server can leave the strong perfume for a different environment.
The above is a constructive critique. It is intended to shed light on my personal experience that day and perhaps build on that and other reviews to improve further. I believe one visit is not usually enough to make an accurate assessment of a food establishment.
I believe they try hard and wish them success.
