ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s Cholon Bistro. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a striking, eco-friendly space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day, in a welcoming environment for all ages. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves handcrafted, artisanal cocktails developed to enhance Symensma's creations. ChoLon is truly modern and truly fusion with dishes that combine Asian and very strong European touches. Some wonderful combos that truly deliver. Very modern space with a great crowd. Terrific wait staff but runners lacked all personality. With food this complicated, diners need a description. They couldn't be bothered. A weak sore point. Still, I'd go back in a heatbeat."

  • "Came here with the hubby on a visit out to Denver- even at 7pm on a Sunday night it was comfortably full. The food is pricier than many Denver options we had tried, but well worth it. The appetizers were the shining star of the meal- BBQ pork belly buns, French onion soup dumplings, and kaya toast with egg cloud (so many interesting Flavors!). We also had the grilled pork loin and Malaysian noodles with seafood to share. Very tasty, but not as high on the wow factor as the apps. The noodles do have a noteworthy amount of seafood mixed in, and we could only get through half of the serving of pork loin- gourmet lunch leftovers! Overall, a delightful experience and great for a special occasion."

  • "ChoLon is well positioned in LoDo and has sleek, beautiful design. The service strikes the right balance between attentive but not overbearing. The menu has good variety and some novel takes on traditional Asian dishes: the Thai iced tea is nothing like the traditional (coconut milk, lime juice, sweetened condensed milk), for example. Probably the most inventive item are the soup dumplings, which are tender and burst forward in the mouth with a shower of French onion soup goodness. Other notables are the lobster crepe and the grilled chicken. Don't expect classic Asian dishes. Or a small bill. It is overpriced for what is delivered, but you'll have a delicious meal with flavorful new combinations."

The crepe starter with lobster rolled in lettuce leaves is sublime & the calamari salad is healthy but so delicious as the calamari is prepared perfectly. The two of us were happily stuffed after sharing a seafood noodle bowl. We highly recommend Cholon. It's not inexpensive but worth it for a great dining experience."

  • "First of all, by 7:30 they had run out of the main entree we desired - waiter promised to come back so we could order a substitute- in the mean time we were served our second choice as we were still eating our small plates - manager ( Dani) came to the table and coldly repeated what seemed like a pattered script asking us what we wanted - in the end, it took 1:45 for 2 small plates to be served - from that point the service was abrupt and inconsiderate! In sum, this was the poorest service we have experienced in Denver!"

Our waiter was excellent in helping us decide on how many of the small plates we needed, as sharing is recommended. He was spot on - there were no leftovers and no one left the table hungry. For the six of us, with a few mixed drinks and 3 bottles of wine, the bill was about $450 plus tip. In my opinion, for excellent food, wine and service, it was well worth it!"

  • "I found the menu offerings at ChoLon to look fabulous and the reality of the flavors was overall inventive and tasty. The service was not so impressive and the space LOUD. Our server recommended 3 or 4 small plates per person to start. That seemed like a LOT of food to us and we opted for 1 each which was plenty. 2 larger plates and a side were indeed more than we could eat. The ribs were excellent but the grilled chicken was charred on the outside and somewhat underdone inside giving it a rubbery quality. Small plates were all good and side dish of Fried Rice Orzo Carbonara was yummy. Very interesting mash up of flavors but spotty service lessened the experience"

Drink orders were only taken twice and took forever to be served. We would have spent a lot more on drinks if we could get them! I ate almost all of my main entree before my glass of white wine finally arrived. Overall, delicious food, every person in our party of seven loved everything that was ordered. But the service was frustrating. Maybe it was an off night, but they were not that busy on a Wednesday."

  • "We had friends in town, so a group of 8 of us got together for dinner. Four members of our party were running late, but we were told we could not order any food at all until all members of our party ordered. So, four of us sat hungry without food for almost an hour (we were early, hoping to get a few apps while we waited). We were seated at a table in the bar section, where it was virtually impossible to hear anything that was being said by anyone other than my immediate table mates. Since we were there for 2.5 hours, I spent most of an entire evening waiting and being unable to participate in conversation. The food was good, but nowhere near good enough for the price I paid for it. Ace has similar dishes for 1/8th of the price. "

  • "ChoLon is the best meal I've had in years. I go out for fine dining numerous times a year and ChoLon has surpassed any place I've been in years. We were a group of 6 and had many of the items from the menu. No one could think of a meal that had anything wrong. In other words, of the 11 dishes we tasted there weren't any disparaging remarks only compliments. We left and agreed the meal was sublime. If you want a unique meal that will have you raving for weeks go to ChoLon. I'll be back. "

  • "My wife and I went to ChoLon to celebrate our 5 year anniversary I had heard great things about ChoLon from a co-worker, and thought I'd give it a try. I was not disappointed. From the moment we walked in the door the service was impeccable! They were there when ever we needed our glasses refilled, or if we had a question about the menu their suggestions were spot on. The food was unbelievably delicious! Some of the most unique combinations of ingredients provided for some amazing bursts of flavor! The family style eating allows you to taste many of their plates, which we really enjoyed. The atmosphere was very nice, not too quiet, not too loud. All in all, in provided for an amazing evening. A place I'll definitely recommend to others."

  • "had dinner with freinds on Saturday night and the food was awesome as usual. Our favorite was the Seared Salmon, Wok-Tossed Asparagus, with Soy-Truffle Butter. The Kaya toast was very good as an appetizer, but seemed almost like a breakfast item. The other hit was the pork belly buns but I didn't partake since I'm a pescetarian."

  • "I love Cholon..it has fabulous food, but this time the noise level was so loud it was al most impossible for our group of six to have any kind of conversation. In addition to the people noise, there was some kind of booming background music that was awful. In addition, when one of us asked for a real red wine glass, the waiter said, "We usually only provide those glasses with bottles over $100, but I can make an exception." I cannot believe that is really your policy, and if it is, it's totally ridiculous!"
