  • "Charles and staff pay attention to every detail. Perfect host, perfect menu always something new and exciting. You could order with your eyes closed and I guarantee you'd love it."

  • "Chef Charles Dale and his staff know how to create excellent French bistro classics in a casual atmosphere. Bouche is our new favorite in Santa Fe."

  • "Enjoyed Bouche last year, and it was superb again this time. Sweetbreads were divine, with French beans and wild mushrooms. If the weather is good (and when isn't it in Santa Fe in the summer?), eat in the "outdoor" tented area."

  • "Wonderful as usual, but this night it seemed that a touch of cream would have perfected the soup and grilling the sea bass without some kind of sauce or lemon juice with butter on top left it too dry."

  • "I found out while there that "bouche" means mouth in French, and how appropriate. Food at this restaurant makes your mouth happy. The taste, the presentation, the friendly but very professional service, the rustic but elegant ambiance all add up to a special evening and a treat for your taste buds."

  • "Great French bistro. Halibut was delicious and sauce was light, superb. Quiet with nice ambiance. Service was attentive and courteous. Highly recommend Bouche."

  • "The meal was excellent and the $30 prix fixe is a fantastic bargain"

  • "The only dish that was memorable was the "sweet breads. The so-called César salad was awful--if you don't want to make an authetnic rendition call it something else. The service was indifferent; this was not the server's fault as he had too many tables to serve."

  • "Bouche is now offering a tasty and timely pre-Opera menu from 5-6pm. Enjoy the luscious escargots, some mushroom ravioli, or sweetbreads or mussels, and a dessert for $30! Or take your time and enjoy their full menu including fish of the day and always foie gras..."

  • "My husband and I had a wounderful time. The mushroom soup was excellent, and so were the frog legs. My roasted duck was a little dry, but every- thing else was very good. The crème brûlée was fantastic and defiantly is a must try."

  • "Once again, Bouche has shown me why it's among the very best restaurants in Santa Fe. The food was absolutely exquisite, and service was everything one could ask for. We found we were repeatedly asking ourselves why it had been so long since our last visit. I can't imagine how we could have enjoyed our evening more than we did at Bouche."

  • "A fabulous dinner! Creamy melon soup & mussels with the divine house bread dipped in the brine. Lovely!"

  • "Bouche Bistro is our favorite restaurant in Santa Fe, along with Vinagrette. Both have their own gardens/farms, which ensures fresh produce. But most important, the food at Bouche Bistro is delicious and the service top-notch. This is bistro fare but executed in a manner that goes beyond a typical bistro. The chilled soups, fish, and small plates such as the wild mushroom ravioli are wonderful. And we assume the other dishes are as well, we just haven't been able to taste them all yet! The restaurant is cozy and inviting, and in warm weather the covered patio is the best place to be eating great food. Finally, a wine list that contains many gems, including wines from Kermit Lynch, always a good indicator of a strong list."

  • "This was our third meal at Bouche. The food was as delicious as the previous two times. They make the best steak tartare in town--we have sampled this at other spots--and everything else was at the same high, unpretentious level."

  • "Superb food, service, decor Comfortable & welcoming"

  • "A brief, but exciting menu makes it difficult for the diner to chose. I had the fabulous escargot and the dinner special that night, chateaubriand. The chateaubriand was so fresh and excellently prepared that I did not even need to use any Bernaise sauce. Hats off to the excellent chef and our wonderful waiter, Ian."

  • "This was our first visit to Bouche as we haven't been in Santa Fe for some time. The entire meal was absolutely delicious and decadent! For a simple and delicious treat try the truffle frites. Can't wait to visit again."

  • "Attentive service, beautifully prepared food with an usual and excellent menu. Our party of three ordered heirloom tomato salad with pistachio pesto, escargot, squash soup, wild mushroom ravioli, Alaska halibut with a salt crust and fresh asparagus, steak au poivre, . It's a special occasion restaurant that I don't patronize often enough but I appreciate that it is in my neighborhood, one of Santa Fe's near-downtown old barrios."

  • "Bouche Bistro is truly outstanding with the very best food and attention to detail. The escargot is better than you can find in France and there is no bad selection on the menu. Definitely one of the finest food experiences in Santa Fe"

  • "With all the yummy Southwestern food, this French Bistro is still a must. Casual vibe with food you might believe just arrived from France. Such amazing produce cooked perfectly and complimented with just the right seasonings and combinations. Each of the four of selected a different entree, all divine!"

  • "We thoroughly enjoyed our meal two nights ago at Bouche. They do a very good job of creating a relaxed, yet elegant european atmosphere with contemporary place settings at tables on the patio surrounded by very comfortable red metal chairs - I felt like I was a world away from our daily routines. The heirloom tomato salad was the most memorable I've tasted in many years. I also ordered the escargot to share and the small plate of mushroom ravioli, which was the perfect portion size for me and uniquely delicious with the pea reduction sauce. The service was very attentive. We will return."

  • "Outstanding menu, food, service, and wine selection, all reasonable priced."

  • "Very busy, even on a Wed night. Excellent French food. Good atmosphere and nice covered outdoor area. Only minor complaint was that waiter constantly encouraged us to order more, or upgrade, items we didn't want. However a simple no was enough. Would highly recommend."

  • "Refreshing watermelon soup, always delicious escargots and tasty mushroom raviolis keep Bouche a great dinner choice. The bread has become a bit soft and 'gummy'...perhaps a bit more time in the over would bring it back to the crisp lusciousness it once had!?"

  • "An intimate interior dining space with al fresco dining patio for balmy summer evenings. A lovely selection of "small plates" and appetizers with locally sourced ingredients, including bistro favorites such as escargot, seared fois gras, steak frites, and perfectly cooked sweetbreads with wild mushrooms. Our waiter was gracious and knowledgeable, recommending of a ZD Pinot Noir (by the glass) to accent the sweetbreads, after starting off with a half bottle of Ruinart Champagne with our Heirloom Tomato/house-made Burrata salad, and thinly shaved tuna carpaccio. The desert list was equally appealing. The Chef/owner Charles circulated the room from time to time ensuring the overall satisfaction of his guests. Highly recommended!"

  • "We returned from a vacation in France two days before dining at Bouche and our dinner was every bit as wonderful as the fine restaurants we enjoyed in the South of France during the prior two weeks"

  • "We had a great evening at Bouche. The staff is very professional and the ambiance is lovely but the food is the draw. Grilled octopus was good, not great. 3 very tiny pieces that although grilled nicely could have been enhanced with a bit more flavor - even a drizzle of great olive oil would have helped. The black mussels w/ a touch of red chile were the star attraction! Going back here to have the mussels as an entree - sopping it all up the best bread in Santa Fe. Very good chicken paillard, nicely spiced and perfect for a summer evening. This restaurant is a real plus for the SF food scene - definitely recommend it."

  • "Boucher has really come into its own. Classic French Bistro feel. Wonderful server. Former owner of Aqua Santa, Brian Knox's yeast starter leads to incredible bread. Charles Dale has a great mood and appears to be genuinely interested in diners' experience and enjoyment of his food. On our Santa Fe regular list now."

  • "The dining at Bouche is a wonderful experience, with persoanlable service, a chic environment and delicious food. The best tartare and lapin this side of Paris. I can't wait to return."

  • "Excellent Bouillabaisse on the 14th along with great frog legs, veggie terrine and an new expanded wine list make for an enjoyable hint of Paris in Santa Fe~"
    Dined on 7/14/2014
  • "Authentic French bistro in a local neighborhood. The Steak au Poivre was well seasoned with fresh herbs and gentle peppercorns. The Bouillabaisse was not that great.Shrimps were tough but sweet, haddock was nicely done, squid was overcooked, mussels were not completely cleaned- Nicoise Tuna was great but Heirloom Tomato salad overdressed and small. Profiterole had great ice cream and cocoa syrup but the pastry was tough. The Strawberry tart had great creme anglaise but again the pastry was tough. Like many of Santa Fe's higher end restaurants, they are trying very hard but the service is lacking (waitstaff could not pronounce names of dishes at a French restaurant) and the quality of food preparation is uneven."

  • "Bouche was our choice for dinner on our last night of a 10 day stay in Santa Fe. We did not have a bad meal anywhere, but I would rate Bouche as one of the top two restaurants we visited (along with Joseph's Bisto). You have an option of entrees or small plates, and my wife and I opted to share salad, grilled octopus, frog legs and escargot. All were excellent, and the service was impeccable. The chef comes out to visit with guests every hour or so, and the outdoor ambiance was great. They also offered a larger than usual selection of half bottles of wine, which was perfect. All in all, we will be back!"

  • "Loved the open kitchen, friendly attention, including by the owner/chef, and delicious and fresh food. We all ordered something different and everything was delicious, light, and inventive. Dessert was also a winner. We can't wait to go back to this casual and upscale French bistro."

  • "...continues at Bouche. A lovely chilled cucumber and avocado soup w/ shrimp and a thoughtful salad niçoise with shaved tuna and perfectly cooked eggs start the meal. A seared California sea bass, perfectly cooked and the menu mushroom raviolis w/ spring peas complimented our bottle of 2012 Sancerre. Excellent and friendly service, as always, and a new and expanded wine selection make Bouche a must for visitors craving a 'chili-free' evening, and locals alike."
