The Caesar salad, while a bit cold, was packed with flavor, featuring anchovy fillets, Parmesan chips, and crunchy croutons. For the main event, I had the 16oz bone-in bison ribeye cooked to a perfect medium-rare, and it was hands down the best bison steak I've ever had. Paired it with mushroom risotto, delicious! Service was top-notch, attentive, and friendly. The restaurant is simple, no frills, but the culinary experience was phenomenal. Steaks were cooked perfectly. The potatoes au gratin were downright indulgent! Hubs confirmed the baked potato was cooked nicely as well. Served with asparagus, tender tender tender. I had the strawberry shortcake, he had the triple chocolate mousse. Food was out of this world for Pueblo - honestly one of my best dining experiences after living here for 5 years. I felt the plates were extremely reasonably priced and the dessert seemed slightly under-priced compared to the meal. Service was exceptional.
