The philosophy at SALT is simple; a belief that the best food travels the shortest distance from farm to table, that menus should change with the seasons and that the locally sourced ingredients, combined with European technique and innovative thinking make for a truly remarkable experience. Chef Bradford Heap and his staff have made a commitment to source local, organic and fresh ingredients whenever possible. The menu reflects this mind-set, simple, yet elegant and delicious. The wines, while sourced all over the world offer our guests some classic profiles, while introducing them to some new and exciting choices as well as a pre-prohibition cocktails with a twist. Approachable, but sophisticated. Enjoy!

They were out of the wagyu beef last night at 6 pm. Which makes me think they don't even have it stock and its purely a "gotcha" item on the menu

A fantastic restaurant with simple dishes done well, full of taste and flavour. The service was professional but friendly and the place has a great buzz to it. I liked that the owners were visible and engaged with the diners throughout the evening. We will definitely revisit.

Outstanding charcuterie tray where you get to choose the cheese and meats you want. The flatbread was also excellent. Service outstanding and very friendly. Did not rush us as we enjoyed sitting at an outside table enjoying the food and wind for 2 hours.

Nice to be able to reserve an outdoor table in Boulder, especially after so many restaurants have closed up. Salt is one of the few remaining. But they are clearly suffering from short staffing and it's no longer an upscale dining experience. Pile up the settings on a garden table, let guests read menus on their phones, and attend to them when possible. Our server was very helpful and friendly, I think they are just still dealing with the situation like every other place. Food was good, not fantastic, but irritating that they charge extra for requests like "hold the cheese from my food". (3 of 4 in our party got dinged similarly).

But the worst, and the thing that put a damper on the evening, was the loud and awful street musician parked next to the dining area, making conversation difficult. (Although we got some laughs at how bad he was.) Nobody could do anything about it. City of Boulder needs to put some control in place now that they opened the street to restaurants. Or give restaurants control of their outside environs. That's not Salt's fault, but it certainly makes me less inclined to go back for dinner.

We both had the Organic Power Bowls and the Flatbread appetizer. The Power Bowls were a disappointment in that the were mostly kale and spinach with little quinoa and beans as described. Also, the salad had too much dressing and bordered on soggy. The flatbread had delicious toppings, but was under baked and doughy. The wait am staff was friendly and informative. Ambiance was very pleasing

Very disappointed that they discontinued the polenta fries with the hamburger. Will not go there again. They also need to stock some name brand gin, like Bombay Sapphire and Tanqueray instead of the funky boutique gins they have.

Just an incredible overall experience. I would have to say the best service came from the two women at the table when we first walked in they were so kind, friendly, courteous and helpful.

We had the mussels and the Brussels sprouts for appetizers and the chicken and power bowl salad for entrees. The food was delicious as expected. The owner came and have a chat with us and the staff was friendly and attentive. Really nice dinner spot inside or for outdoor seating. Highly recommended

We went on a Friday night and sat outside which was lovely. The menu is not large but offers a lot of variety for any mood or diet. I opted for salad and appetizers since they are all so tasty. My husband had the fish special which he greatly enjoyed.

This was the first time we've gone down to Pearl Street since Covid. Salt has always been on our Top-25 list, so we decided to start there. We both began with the Tomato soup, which Salt is known for. My wife ordered the chicken for her main (which she liked) and I had the gnocchi bolognese (which was more than I could eat and could have had more bolognese). My wife really enjoyed the "Golden Bow" cocktail and I had a nice rose and a glass of Montepulciano that matched well with the gnocchi. The service was excellent, as usual, and we enjoyed our return to Salt.

Two of the 6 entrees were no longer available at 6:00 on a Monday leaving an already slim menu even slimmer.

We were so disappointed; SALT was one of our staple restaurant rotations in Boulder and my kiddo's fave. She was very excited to return after the Covid hiatus and chose this restaurant for her birthday. She ordered kids pasta -- under cooked after waiting for nearly 1/2 hr, had to send back and reorder. The menu is much smaller, and the two other dishes we had were just so so. Not the quality of food that we are used to from this wonderful establishment.

THIS WAS ONE OF OUR FIRST NIGHTS OUT AFTER COVID AND WE HAD A MEMORABLE EXPERIENCE AT SALT. BOTH OR OUR DINNER ENTRES WERE EXCEPTIONAL. THE MENU IS SMALLER AND MAYBE THAT CONTRIBUTES TO THE QUALITY. A WARM, ENGAGING WAITER ADDED TO THE OVERALL EXPERIENCE.

We enjoyed the Brussel sprouts for an appetizer. The chicken and lamb main dishes were good but we would try something different next time. We ate outside to soak up the great weather and ended up in a rain shower getting soaked. Over all a good experience. Would try it again.
