Using some of the oldest techniques in the world— a wood-burning oven, an open flame grill— chef Asaf Maoz interprets ancient Levantine cooking traditions through a modern lens.

Dishes showcase the best of the season: farmer’s market produce, sustainably-sourced meats and seafood, all prepared with the global culinary influence of the Tel Aviv shuk. Breads are baked in-house, including a 72-hour fermented Moroccan Frena, baked to order in the wood-fire oven.

Géré par les chefs Walter Manzke et Margarita Manzke, le restaurant Republique vous accueille en plein cœur de Los Angeles, dans un bâtiment classique construit en 1929 et habité par Charlie Chaplin. Ces locaux ont été ensuite occupés par les emblématiques boulangerie La Brea et restaurant Campanile. Le Republique est fondé sur ce passé glorieux, offrant un environnement gastronomique empreint d'histoire et de grandeur. Un bar décontracté et un bistrot se trouvent à l'avant du restaurant. Une salle à manger plus formelle est située à l'arrière. Vous pourrez y déguster un menu d'inspiration française créé quotidiennement par les chefs.
