In August 2024, Michelin & James Beard-recognized Chef Ricardo Zarate opened The Hummingbird Ceviche House featuring the Nikkei (Japanese-Peruvian) cuisine he’s best known for. In a charming space with a turquoise-quartz bar, The Hummingbird serves an irresistible bill of fare focused on fresh seafood prepared using Nikkei techniques elevated by California influences. The L.A. Times' Laurie Ochoa wrote: "...the service is caring and the food, including an aji amarillo hummus flatbread and sesame-leaf shrimp dumplings with tiger's milk aioli, is inventive and delicious.
