The award-winning Uchi, which translated from Japanese means “home,” was first opened in Austin, Texas by James Beard Award winner Chef Tyson Cole. Since then, Cole’s signature non-traditional take on Japanese cuisine has been warmly received by visitors from across the country and around the globe. Reservations are encouraged and can be booked online up to 1 month in advance. Walk-in bar seating is available and is subject to wait times. Patio seating is weather permitting and may be rescheduled in the event of inclement weather. We look forward to serving you, Kanpai!

We offer the best sushi you will find in Steamboat and beyond. Open Tuesday-Saturday at 5pm.

Reservations are recommended. Walk-ins are welcome.
We offer regular tables, high-tops, sushi bar seats, and our community high-top bar.

We do not accept reservations at this time, as we are first come - first serve. Our online waitlist is available from 4:30pm-10:30pm every day on the OpenTable app. We have an 8 guests maximum per group. Please call the restaurant if you have a party larger than 8 people, though we cannot guarantee larger parties will sit down together at same time or same area. Once your group is called, please come back within 10 minutes as we will need to move on to the next group on the waitlist.

When we say we have been to Chubbyfish every week we mean it; this place brings us back as valued customers and even thou people come and go the CORE remains. Peter, Max, J, Kaden, Oli, juila, and MIKE. This place is our favourite as the food is epic and the service is great but it’s the PEOPLE who make it what it is. Japango in Fort Collins has become our go-to place when we're in the mood for sushi. The ultimate test is the quality of the nigiri and sashimi, and Japango is the best we've had since the owners of our previous favorite decided to retire after 35 years. We occasionally try other sushi places, but so far none compare. It is tough to rate the "value" of a sushi restaurant, because good sushi is seldom cheap, and cheap sushi is seldom good. If that makes me a sushi snob, then so be it...
