Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

The Bull Ring has been a part of Santa Fe’s Culinary landscape for so long it's hard to think of a time when it wasn't there. The world famous Bull Ring offers all the most popular cuts, ranging in size from the the 8-oz petite filet to an enormous 40-oz porterhouse for two. The Bull Ring prepares steaks in an 1,800 degree grill and serves them on a sizzling hot plate with melted butter. The Bull Ring is also known for their juicy lamb or pork chops, mouthwatering barbecue baby back pork ribs or fresh seafood.

If you are looking for a more casual experience, the lounge is a local favorite, where you can mingle with old friends or make new ones in a Cheers-like atmosphere. The bar serves exceptional pub fare, including the succulent Prime Burger.

The atmosphere was wonderful and the wait staff was exceptional. If you like red meat, this is the place to eat, but they also have plenty of seafood selections.

The three of us had the Omakase (chef’s choice). Before ordering we were given a small plate of fried pieces of fish in a spicy sauce. We each then ordered the omakase, the chef’s choice. We were then given identical platers of sashimi and sushi. All excellent. To drink we had a jug of green tea and another of a fruity saki. For dessert my wife and I split the flourless chocolate cake (she had the ice cream, I had the cake), while our daughter had something else I don’t remember. Service was prompt and got us out in time for the opera.

We enjoyed pleasant and attentive service during our dinner at Red Sage. The restaurant is in a lovely setting next to the pool area at the Buffalo Thunder Hilton Hotel. Most of the food was very good, but I wouldn't advise ordering the potatoes au gratin. It was served as a rather bland slab of indiscernible potato mixed with other substances. We especially liked the crispy fried shrimp with Korean garlic sauce. Overall, we were very pleased with our meal and would recommend the Red Sage for a special night out.
