OMAKASE means "Up to you" in Japanese. A unique Japanese dining experience that involves placing one's trust in the chef's culinary skills to create a personal meal. This selected course meal includes carefully crafted dishes from appetizer to Nigiris to tempura to grilled fish to soup to all the way to dessert. This journey begins with the freshest, highest-quality fish imported from Japan. Our sushi chef, Haruki Higashitai masterfully navigates the seasons, bringing you distinctive flavors the reflect the quality and essence of each ingredient.

Owned by Chef Allen Hess, FORC brings farm to table in the heart of Waimea. FORC showcases a farm to table aspect by bringing fresh harvests from Farmers, the Ocean and Ranchers. By changing our menu seasonally, we are able to get creative with what Hawai’i has to offer us. Local style brunch items like our FORC signature sandwich, brown butter banana pancakes and our housemade bacon.
