Chef/Owner Eric Brenner spent his first decade in the industry inside Italian kitchens. Talking up St. Louis' wide-ranging Italian eatery scene, which gets as specific as regional specialties, he says he's wanted to have a place like this since he was 18.
"We're going to start very simple and accessible," he says, "we'll play to the crowd and start a dialogue, then grow the menu with community input."
"Simple," includes dishes like his tomato bisque, with which only has five ingredients. "It's all about the perfect balance. And that gets back to the essence of good Italian food: quality ingredients, very few, in perfect balance." Other examples include his St. Louis-style, thin-crust pizza, best compared to a flat-bread.

Took some friends out who have never eaten here before and they raved about it the entire meal and the next day. They asking when are we going back!
Food was amazing. Although our server was very sweet, she was clearly overwhelmed and struggled with 4 tables. My husband and I waited 10 minutes to be greeted, then another 15 for waters. We ordered an appetizer which took a long time to come out...we asked for cheese bread because we had a very hungry toddler, this took nearly 30 minutes. We were sitting for an hour before we ever got our dinner. She stated “I will bring the oil and vinegar for the bread” then never did so. We asked for Parmesan cheese, which she never brought. We ended up having to get up and ask the bartender for Parmesan, then I had to get up to find my own silverware because we didn’t have any and couldn’t find her. When I did see her she couldn’t even be flagged down. I noticed her two other tables next to us complaining as well. One table never got their waters asked another server, stating “our server never brought our drinks” and the other asking “where did she go, I think she forgot about us.” She did apologize and we were not mean to her, she was clearly overwhelmed. However, the experience was poor due to the service to say the least.
The eggplant Parmesan was burnt and the pasta under it was cold. Veal saltimbocca was good but very small. The service was slow, long wait after ordering. The server was nice. And the chocolate torte was good though.
One of our favorites. This visit the service was excellent, the food was good as usual, and we all enjoyed our dinner. We always enjoy the butternut squash ravioli, and the Sunday gravy pasta. Seems the menu has changed a bit from a year ago, and as with all things, prices have increased, but overall, still good.
Nice place but had to keep going to find server. In all fairness they are suffering the same as everyone being understaffed. Will go back again.
We had a great meal and drinks at Red Gravy. The dirty martini was outstanding as was the old fashioned. The food was excellent and the service by Cheyenne was terrific. We need to be gluten free and they did it with precision! We will definitely be back!

My NYE date and I dined here. I made reservations online, and was a little apprehensive when we arrived because it appeared a little more casual than the photos indicated, and it was a little noisy. We were greeted at the door and escort to a back room that was much quieter, had live music, and only had one other couple dining in it. The ambiance was perfect and amazing, the service was prompt and attentive, and the food and cocktails were delicious. Would give 10 stars if I could.
I am hesitant to leave a review of service during this time since I know many are short staffed and struggling to get people to even show up to work. This is just unheard of in my day and age. The food and beverages however were outstanding and everything cooked or prepared perfectly. The shrimp scampi appetizer is must since you can dip the complimentary bread in the sauce which is heavenly. The chicken Marsala is very good with mushrooms, artichoke hearts and Gnocchi. Any pizza with Provel cheese is a treat in Colorado Springs and the blueberry butter cake topped with the cannoli is incredible and a great way to finish up. A few more brandy or cognac options is the only thing I would change. A Courvoisier or Remy Martin would be a nice add. Regardless of the slow service we will be back.
Food was excellent. Music background level was a bit too high, even after we asked for it to be turned down.
It is crazy how something as simple as spaghetti and meatballs can taste so darn good. Amanda was fabulous as usual and the service and food were great. I think we will come back tomorrow for our anniversary.
Our table ran the gambit from Lasagna, Egg Parm, Scallops, Fettuccini and Bolognese. It was all delicious! The table shared calamari, risotto balls and toasted ravioli that were great too... They were open until 10 pm on Christmas Eve! A must stop if you're in Colorado Springs!

It was cold waiting outside for opening.
Once inside we were happy and the food was excellent. Once we got our food, the service was slow but server was apologetic. As the place filled up the noise level made it difficult to converse.

Fantastic food, as always. A little loud, but we expected that on a Saturday night. The only negative was the noise made our waiter a little hard to hear, but that’s easy to work through! We love this place and are so glad it is still around!
The food was excellent. Music so too loud to have a normal conversation. Our waitress wasn’t helpful when we asked questions about items on the menu. We will definitely go back and try other food options.
My husband and I absolutely love Red Gravy. The garlic cheese bread with tomato bisque is to die for. Our server was fantastic. We always have the best time here.

Chef needs to spend more time in the kitchen and less time meeting and greeting. Food was cold, fish over cooked but served cold. Waitress had limited knowledge to the menu.

We had a very nice meal at Red Gravy. The service was outstanding, as well as the food.
We arrived 30 min early due to the parade and unsure how long it would take to find parking, the hostess declined to seat us even thought the restaurant was nearly empty explaining this was the manager's instructions because the kitchen was trying to recover so I suggested we wait and the bar but she explain they were trying to catch up too, so we went next door and waited (and bought a round of drinks) until they called 20 minutes later. We returned to be seated to a still un-set table. We were going to order drinks but the waitress was curt and uninviting acting as if we were a interruption, so we ordered a appetizer and bottle of wine to share instead. We were not brought bread and she didn't bring silverware for the table so when our cold shrimp scampi arrived we had no way to eat it. No check-back was performed so we sat for maybe another 7-10 minutes unable to eat it (not that we wanted to at this point), so I went back to the hostess stand and asked to speak to the manager, to which she explain he was busy in the kitchen but that she could help me, I replied that I wasn't happy the the way we were turned away by her to begin with and that I would pay for our wine but we were done. While I realize we are all short staffed in hospitality that really didn't appear to be the problem at Red Gravy. We weren't in a rush but when you turn a party away to an empty dining room and then seat them after you "recover" to an unset table what does that say about accommodation and customer service? Follow that with inattentive service and cold, poorly prepared food and the decision to leave made itself. This was the second try at Red Gravy I was tempted by the menu but skeptical if they could pull it off. We were celebrating and planned to spend a good night out here but I wasn't willing to waste significant money on what was shaping up to be a terrible experience. I'm lost as to why the Springs hasn't one good Italian restaurant.

Everything was great with the exception of the eggplant parmigiana. The tomato soup was excellent. The bread was great. Dessert was excellent as well.

They were short staffed, which is understandable. None of the pasta was good. Ravioli was too heavy, butter sauce with creme sauce is not good. Linguini w clams was way too watery…and the spaghetti w meatballs was like a better Chef-Boy-Ar-Dee. Wont be back anytime soon. Considering alot of the menu is pasta, the owner needs ti get a better chef.

This was our first time eating at Red Gravy. We read the reviews, and noticed that there were criticisms of the timeliness of the service, and the attitude of the staff. We experienced none of this. In fact we received a call an hour prior to our reservation informing us that they were short staffed, and that things may be slow. However, even though the restaurant was fairly full, our waitress was outstanding, and our meals arrived to the table without delay! The food was delicious! I only wish I remembered the waitresses name! I live in Atlanta, and have family in Colorado Springs, I will definitely be returning the next time I am in town!
