Italy is not homogenous. It is a vibrant tapestry of cultures, dialects, topographies, climates, flora, and fauna. Therefore, its food and its wine change dramatically according to where you find yourself on the peninsula, or off it. The Tavernetta Wine Dinner series is an exploration of the very best of Italy's diverse food and wine traditions from the warmth of the dining room of Tavernetta Vail. It’s a sensory journey through our favorite food and wine country on Earth. Join us July 17th for an enchanting evening celebrating Tuscany. Of all the regions of Italy, Tuscany’s wine tradition is among the most significant. Justly so: elegant, savory Chianti Classico, long-lived, Mediterranean Brunello di Montalcino, and powerful, baritone Super Tuscans occupy the choice end of restaurant lists and private cellars the world over. This multi-course tasting menu will showcase our favorite producers and grape varietals in Tuscany alongside Chef Ethan Diamant's take on the great classics of Tuscan cuisine: earthy, straightforward, and soulful but refined. This is our greatest-hits selection of the food and wine one might enjoy in the rolling hills above Florence, dusty sun setting, beneath the cypress oscillating gently in the breeze. Course 1: Boca di Gama | Foie Gras, Hazelnut, Mountain Berry Felsina 2018 Brut 'Millesimato Metodo Classico,' Castelnuovo Berardenga Course 2: Carciofi | Artichoke, Fontina, Summer Truffle Riecine 2021 'Bianco di Riecine,' Giaole in Chianti Course 3: Pici | Porcelet Pork Ragu, Fennel, Pecorino Toscano Tenuta di Carleone 2022 Chianti Classico, Radda in Chianti Le Ragnaie 2019 Brunello di Montalcino Course 4: Bistecca alla Fiorentina | Dry-Aged Porterhouse, Fairy Tale Eggplant, Yukon Gold Potato Le Macchiole 2020 'Paleo,' Bolgheri Course 5: Torta di Mandorle | Almond, Plum, Caramelized Sugar Badia a Coltibuono 2015 Vin Santo, Gaiole in Chianti

Italy is not homogenous. It is a vibrant tapestry of cultures, dialects, topographies, climates, flora, and fauna. Therefore, its food and its wine change dramatically according to where you find yourself on the peninsula, or off it. The Tavernetta Wine Dinner series is an exploration of the very best of Italy's diverse food and wine traditions from the comfort of the dining room of Tavernetta Vail. It’s a sensory journey through our favorite food and wine country on Earth. Join us Thursday, August 21st for an evening celebrating Campania. The Amalfi Coast: along this illustrious stretch of coastline, just south of Naples, the rugged, mountainous Campanian interior plunges abruptly into the Mediterranean. Pastel buildings cascade down cliff sides, and winding roads sweep precipitously above rock and pale blue water. As they say about the Mosel, the Northern Rhône, or Ribeira Sacra, dramatic landscapes produce dramatic wine. Thanks to the ancient Romans, Campania boasts one of the western world’s oldest winemaking traditions. It produces vibrant, mineral, sea breeze fresh summer whites, well-suited to the shade of a blue-striped patio umbrella in Positano, as well as white wines of richness, depth, and texture. But there is more to Campania than its Mediterranean coast. Inland, into the mountains, resides the ancient, reclusive grape varietal Aglianico, which produces some of Italy’s most serious, structured, and age-worthy reds. Plus, thanks to the sea, fertile volcanic soils, and abundant sunshine, Campania’s raw ingredients, full of energy, form one of the peninsula’s richest culinary traditions. Course 1: Burrata | Palisade Peach, Almond, Nepitella Ciro Picariello 2021 Fiano di Avellino 'Ciro 906,' Summonte Course 2: Calamari in Zimino | Squid, Esoterra Greens, Salmoriglio Contrada Salandra 2020 Falanghina, Campi Flegrei Quintodecimo 2021 Greco di Tufo 'Jaune de Arles,' Mirabella Eclano Course 3: Spaghetti alla Nerano | Costata Zucchini, Squash Blossom, Provolone di Monaco Marisa Cuomo 2021 'Fiorduva,' Furore, Costa d'Amalfi Course 4: Agnello | Braised Lamb Loin & Neck, Olathe Corn, Romano Bean I Favati 2009 Taurasi Riserva 'Etichetta Bianca,' Venticano, Avellino Course 5: Essence of Affogato | Mascarpone Gelato, Espresso, Almond

The staff was so good and all were willing to accommodate my diet needs. However, we ordered a very expensive 32 ounce ribeye to share that was not worth the $$. Grisly and seared too much on the outside. Did not a great flavor either. Others had the halibut and said it was good. Stick to pasta and fish?!

This was our first time visiting Tavernetta Vail. It surpassed our expectations! Starting with the beautiful renovation, to the outstanding service every step of the way. We have been to Tavernetta Denver so we had some understanding of the quality of the food - but WOW! The staff was also very helpful regarding my food allergies, everything was perfection!

This was out 4th dining experience. The food was very good. The service was erratic. We were embarrassed with our guests as we were expecting another wonderful dining experience. We ordered wine with dinner and bottle arrived literally as we were finishing our plates. The server should have at least given us complimentary desserts. Nothing offered to bring the dinner to an elegant closure.

We were astounded by the poor preparation of the entrees by a Four Seasons Restaurant..The crab and caviar pasta dish had so much of the salty caviar and chewy pasta that one couldn't taste the meager amount of crab in the dish. The summer polenta was swimming in so much oil that it delivered mainly oil and little polenta in each spoonful...maybe this dish would work for someone just arriving after 8 hours of skiing. We also had the veal appetizer that was cooked too long..would get an F compared to the dish at Harry's Bar in Venice! We were seated in the back part of the restaurant with a large table of 6 loud(especially the moms) and their 6 children all about 4-6 years old and the fathers in ball caps turned around backwards. The best food we had was the 2 absolutely delicious brownies they had left and brought to our table to offer us as THEY realized how loud they were...our waitress did comp ONE bowl of gelato to go with the brownies to compensate for our barely eaten entrees. We should have had a visit from restaurant or management staff as it was obvious we were having a far below what I would hope would be a (par experience) for this restaurant and these entrees. Other restaurants in a Four Seasons where we have eaten often would have done this and would have at least apologized!! Please don't send me any gift vouchers for THIS restaurant as I will never choose it again when I'm back in Vail.

Lovely ambiance and helpful, attentive staff. The menu is limited and as with sister restaurant Frasca, everything must be ordered at once - no leisurely nibbling and menu perusing. The pasta was very good but the salad was heavy and more in line with steak house fare. It's an expensive dining experience - check the menu and your pocketbook before deciding. However, why is that a surprise - it's Vail AND the Four Seasons, double whammy. Overall an enjoyable evening.

Every item on the menu was delicious. Service was impeccable. Highly recommend the lamb and the bombolini. Just know before you go that portions and pours are pretty small and prices are significantly above great nearby restaurants.
