Love the nature concept, in the furniture and in the food. Everything is in earth tones and it’s beautiful. Celebrated a birthday here. My husband had the pork chops, I had the mushroom confit. Both were delicious. The views were stunning. The rooftop terrace, adjacent to the Stellar Jay restaurant, where they only serve drinks, has an amazing view of the city. The windows in the restaurants reminded me of portholes in a ship, but bigger and all in different shapes, offering a different view of the mountains to the west and of the city. The hotel, Populus (the scientific name of the Aspen tree, where the restaurant is located, was built to look like Aspen trees. It’s a tall white building and the windows represent the black knots in the tree trunks. Beautiful and unique. If you are celebrating something, this is the place to go. Trendy, different, and fun. It has it all, good food, nice ambiance, beautiful views.

Delicious food and cocktails, plus super friendly and on top of it service. We loved the interior design of the entire property as well. All four of us agreed it was an outstanding dinner and experience!

Wasn’t stellar. Food was fine, service wasn’t amazing in conjunction with the prices. The seating at the counter couldn’t have been more uncomfortable, to get tucked away in a back corner and sit in a chair that was made for a child.

The staff there was so friendly and made us feel very welcome and wwere so accommodating! Everyone from our server Shelby to the manager to the other staff that helped us out! Amazing restaurant with amazing views! Food and drinks were awesome too!

Incredible from start to finish! No notes! The food was spectacular. The drinks were spectacular. The location was spectacular. The view was spectacular. The staff and service were spectacular.

My girlfriend and I had a 7 PM reservation and were excited to try Stellar Jay, but the experience left us disappointed and uncomfortable. We were seated at the counter in the corner of the restaurant, facing a dirty mirror, with low chairs that felt more like an afterthought than proper seating. Our backs were hurting within minutes. On top of that, we were right by the kitchen—so close that we could hear dishwashing, shouting, and constant noise. It was nearly impossible to have a conversation. We politely asked if we could be moved, and the host said he’d get back to us, but never did. It honestly felt like we were being pushed aside or even profiled based on how we looked. Everyone else seemed to be seated more comfortably, and we were left in this awkward, loud corner away from everyone. The bright spot was our server—she was warm and kind. The drinks and bread were also good, but it wasn’t enough to make up for how unwelcome and out-of-place we felt. We ended up leaving 30–40 minutes in because the whole vibe just felt off. I hope this feedback is taken seriously. Every guest deserves to feel respected, comfortable, and valued.

Stellar Jay was a wonderful experience. The food was fantastic. The service was fantastic. Seating for food is inside only, can have cocktails on the patio.

We were seated in a strange hall outside the kitchen where every employee yelled "corner" every time, as you'd imagine, they approached said corner. We also had a server on their first night of service so we had to repeatedly flag down someone for help. This may also have something to do with where we were seated. Oddly completely in sight yet entirely out of sight.
