Absolutely loved every part of my experience at Sauvage. The service was outstanding from the minute we sat down until we finished off our dessert. The food was amazing. We were unsure about the elk shortrib but this and the ricotta gnocchi were our favourite dishes. We were also pleasantly surprised by the date cake! Thankfully, our server gave us the nudge we needed to try things we were unsure about. She was so confident that we would love it and she was not wrong. The atmosphere was awesome. It felt intimate but still energetic. I would definitely go back and would recommend this to anyone looking for a dining recommendation in Canmore!
This place was INCREDIBLE. Everything from the decor and setting, to service and drinks, and the food/tasting experience…it was all fantastic. I would highly recommend this restaurant and I look forward to coming back and dining here again!

Our first date night out in almost two years and we were not disappointed. The service was spectacular and we loved the intimate ambiance. We ordered the Chef's tasting menu and were delighted from course to course. We will be back!
A very magical place, felt like you were eating in an Alice in Wonderland setting. The food was good but I felt pricey for what you got. I would recommend the ricotta gnocchi but not the elk.
Sad to see it is no longer Spanish Tapas but the food was still very good but pricey for what you get. 11 dollars for a few slices of bread and 45 dollars for one large elk rib. Still worth a visit and unique.
Choosing what to eat will not be hard as menu options are very limited not more than 8 to 10 items. Dishes are for sharing. Food is creatively prepared and appealing. I found the meat balls and gnocchi tasty but over salted for my tastes. Neither of the 2 dessert options appeared to us.

We did the tasting and the food that should have been hot was luke warm. For the price it should have been perfection. We are let down as we thought it would have been better especially paying $300 for dinner for 2 people.

The food wasn't good at all. The waiter was rude. Over priced. Canned mushrooms on burn bread. Will not be back.
Lovely setting and prompt, welcoming service. Mushrooms on toast decidedly boring. Little flavour, barely warm (perhaps intended?). Fortunately, there wasn't much of it. Yak meatballs much better. Braised dandelion and pickled onion good. Haskap berry a nice addition but would have been nice if there had been more than one.

With new ownership, we were not disappointed! The small plates and ambience of Tapas were still part of the experience and the food was exceptional. We tried 6 dishes and were stuffed by the end but we didn’t want the tasting menu this time. We should have had one less dish but it was hard to decide! Looking forward to going again it know that the menu is always changing. Kudos to the Chef and owner for preparing the freshest, local meals with the most incredibl flavors. Well done!!

I dined alone and had a cozy spot at the bar. The decor is dark, moody and fun. Can you spot all the bunnies?
Once seated I was kindly greeted by Ylva who was the bartender and my server for the evening. She took me on a culinary and cocktail journey that resulted in one of the best dining experiences of my life. Oysters, Bison Tartare and the Smoke Trout were outstanding! AND the custom cocktails were mouth watering. If you don’t finish the night with a “Bearly Russian” (or two) then you are missing out.
