Had never tried bison till we ate at PRIMUS and it did not disappoint! The burrata starter was amazing, definitely set the tone for the rest of the meal. Our bison tomahawk and sirloin were cooked perfectly and our Brussel sprouts and the lobster risotto was spectacular! From the service to the food everything was above and beyond, made our anniversary dinner perfect. Will definitely be back!

I picked this restaurant from Open Table choices. I have never been to Durango before so had no idea where to go for dinner. I chose Primus and I am glad I did. Great restaurant!
Service was excellent. Ambiance was Ok, Sat in a long area with a white wall in front of us. Everything had lots of cheese. Each item of food was good but you better love cheese. Brussels sprouts were good but too much cheese. Scallops were really good but lots of cheese. Caesar salad was great but had cheese. My husband had potatoes and cauliflower as his sides and both covered in cheese. His bison steak however was unfortunately very chewy. .

Wow. This was our first time to eat at Primus. We were not disappointed! Food was amazing, atmosphere was intimate and we left wanting to come back…and we will!
We booked the outdoor bump out. Very nice. Great service and very unique and tasty entrees. Highly recommended if want more than the usual fare. Good cocktails and wine too
One of the best meals in quite some time. Really enjoyed the super fresh bison tartare which was cut coarse so it had nice texture to it. It was nicely garnished with some light lettuce as well as great crisped crackers. Also had the bison filet which was cooked to perfection, very tender, great flavor. Finally, they also make a killer Manhattan.
Service was great (Lacie (sp?)) and the chef/owner also came by to chat.

The food was all wonderful...very detailed. Outstanding service . All the staff and Owner where very friendly. Lacey was very personable , patient and knowledgeable.
It is no contest, Primus is the best restaurant in Durango. The food is very cutting edge. But be warned, it is also the most expensive.

We found this place by accident. The entire restaurant is only 9 feet wide what they do with that space is just amazing. The chef prepared some of the best meals we’ve had in years and the cocktails made with fresh ingredients (fresh squeezed juice) were really good. Service was excellent, food was excellent and I would highly recommend this place. ’d be surprised if they don’t start to get booked up every single night because of the quality of their food.
This is hands down the best restaurant in Durango. You can tell that everyone who sits around you knows it too. Almost everyone is a regular. We sat outside so there is plenty to look at. Add in some great food and you have a perfect experience.
I cannot express enough, my gratitude for this quality of food. You can tell that every aspect of your plate has been thoroughly thought through. If you are unsure about what to order because it all looks good? Ask your server. They know and will not steer you wrong.
Not since restaurant Alinea in Chicago have we experienced such an over the top culinary journey! Primus owner and Master Chef John Daly IIII could not have been more personable and demonstrative of his talent. Over all the years as an Open Table user on a quest for great dining experiences, a few stand at the pinnacle of unforgettable. Primus in Durango is definitely among the very best and go down as unforgettable too! Next trip to SW Colorado, we’ll surely be back!

Fantastic food, drinks and service, the wild game menu is amazing! Paco was our server and gave great suggestions and was perfectly attentive. Perfect date night!
One of the best meals I’ve had in my life. Everything we ordered was fantastic! You can’t go wrong with anything on the menu. Service was also excellent and the chef came up to meet the patrons near the end of the meal. Highly recommend!

Small restaurant. Ambiance and service were good. Noisy foursome next to us, but of course that is hit or miss and not the restaurant’s fault. Goat cheese was really good, octopus was ok, and the Bison Tomahawk was OUTSTANDING. Creme brûlée was just ok. The Bison Tomahawk is enough reason to go there. 24oz, so wife and I split it.

The location of your restaurant was excellent, right in the center of the historic Durango district. We both highly recommend your restaurant to anyone wanting a delicious meal (but make reservations).
Absolutely wonderful meal from start to finish. The goat cheese puff pastry appetizer was delicious! The entrees at our table were Seared Gulf Coast Grouper, the Pork Chop, and the Lamb. All were excellent. Not only was everything flavorful and perfectly cooked, everything was plated so beautifully. A very memorable meal for sure. Cannot wait to return!
We love Primus! The menu is very unique. There is something for the adventurous as well as the more cautious eater. The service is always wonderful and the food delicious.
We hadn’t been to any fine dining in Durango and were so pleased with our overall experience from our waitstaff to the last blackberry on our goat milk cheesecake. Definitely will be back. Thanks for helping us celebrate our 80 year old mother!
So good last time, we brought friends this time. So glad, because John and Kerry delivered another outstanding experience: food, service, ambience! No trouble accommodating a gluten free and cow dairy free diet. Ostrich loin cooked perfect medium rare as was the bison sirloin. Scallops were firm and tender. White asparagus and other sides paired perfectly. Finished with a fantastic GF goat cheese cheesecake! A rare treat.
Primus never disappoints!! We had the pork chop, ribeye and of course lobster Mac n cheese. Everything was simply Devine. By far, the best restaurant in Durango, Co. An experience you must try. Everyone is super professional and kind. Can’t wait to go back very soon!!! They are ROCK STARS!!!!!

This is an outstanding restaurant!!!The menu is varies with items not necessarily found on most. THe food preparation and presentation is exemplary. The bison tenderloin was outstanding- a true example of melt in you mouth tender. The sides are wonderful and reasonably priced. The service could not have been better: our server was knowledgeable and very helpful, not to mention patient helping us make our decisions.
Food took forever to arrive and was terrible when it did. Extremely expensive for low level of quality. Dine elsewhere.
We had an outstanding dinner of alligator, duck breast, and venison to celebrate our 46th anniversary. Lacey was very attentive and went above and beyond to make us feel welcome throughout our dining experience. The Sin Zin wine paired well with the meal.
Food was absolutely fabulous!!! Goat cheese starter was delicious as well as our entrees. We had the bison sirloin and bison filet with lobster risotto and potatoes! Flavor was out of this world!
