The food was outstanding! Chicken fajitas for my wife, bison (buffalo) short ribs for me. The meats were cooked to perfection and the Ojo Caliente farm vegetables were simply delicious. And of all things, the Ojo Caliente grown blue corn muffins were incredible. When mentioning this to our server, he gave us a printed copy of the recipe (its for 200 people, but we'll figure out how to reduce the ingredient proportions). We also loved our drinks (wine for my wife and a delicious New Mexico amber ale for me). Then, kudos to the entire staff, from the host, to our server, to the kitchen and bar staff. All did a fine job and made for a great team.

I stayed at the resort and booked a dinner at 8:15pm the night we came in. They are down to two cooks, but didn’t advise us of that when we arrived early to check in. We were seated promptly and ordered entrees immediately but because they were backed up in the kitchen we waited over an hour before we got the full details and ordered an appetizer to tide us over (which was comped). The wait staff is wonderful and the restaurant is beautiful. It is unusually loud for fine dining which we found out from other guests is because the spa waters are whisper zones only - so everyone gets their talking out at dinner. We went home to our cottage onsite (no oven no stove top) an hour and 45 mins after our reservation time with to go boxes of over-dried chicken without the toppings from the menu and nothing else to eat. The menu was also narrowed down to accommodate the short staff, but that isn’t indicated on the website or for how long so you can’t get most of the dinner dishes. This is not a sure bet after a long flight. Others who were there on a day pass also waited as long and got theirs to go as well, as it was close to closing time for the spa waters and they hadn’t planned on a three hour dinner without food.

We had a marvelous lunch and two dinners at Ojo Caliente. The food was absolutely delicious! We ordered the pork chop, spare ribs, chicken mole and salads. The serving staff are exceptional! Annie, Kyle, Lisa, Brandon and many others were kind and attentive. We highly recommend the restaurant at Ojo Caliente.
