Located in Paia, Maui, we invite you to dine in our intimate, all Chef's Table dining room. Our everchanging Market Driven Menus always include a glass of sparkling wine, are Prix-Fixe, between 6-9 courses and range from $200-$300 per person plus tax, gratuity and any additional alcohol.

RESERVATIONS, CANCELLATIONS AND DIETARY RESTRICTIONS: If you are late, please call to let us know. We will make every attempt to catch you up, but we absolutely cannot make any guarantees on coursing and pacing. Reservations are STRICTLY held by Credit Card. Cancellations within 48 hours of the reservation will be charged $200 per guest, WITH ABSOLUTELY NO EXCEPTIONS. Please allow at least 2.5 hours for dinner. Allergies or dietary restrictions must be made known to the restaurant when reservation is made. If dietary restrictions are presented without notice, we will make every reasonable attempt to accommodate them but can make no guarantees.

This is a special place. It's expensive. $300/person. Wine pairing is another $120-160. It's long. 3+ hours. But it is WORTH IT. This is a small restaurant run by a husband and wife couple who've lived on the island for decades. The care they put into every aspect of the experience shows. The husband is the chef. Personally cooking everything himself. He changes the menu NIGHTLY. The ingredients are premium and mostly come from local farmers. Everything is high quality and cooked to perfection. These are not simple dishes either. Each course includes many different elements that each took time and care to prepare. The wife runs the front of house and she couldn't be more wonderful. She remembered us well even though we only dined there once a year ago. You really feel like you're in their home being cooked a gourmet meal by a family that really cares. And that's what this is. No big hotel. No ocean view. No corporate chain. Just a small family restaurant cooking amazing food. If you have the budget and the time, you MUST try this restaurant. It's a truly unforgettable experience that will be a highlight of any trip to Maui. We should all work together to support local businesses like this whenever we can.

There are no words to describe the level of excellence. Every single facet of the tasting was fabulous. We were a party of five and thoroughly enjoyed everything. The detail was incredible. They are a great team ! They will be in Vogue magazine someday with their Michelin star !!!

If you are looking for a special occasion night out, we would highly recommend nyloS. The food is some of the best we have ever tasted, and the chef and his wife, who is the hostess, were open, hospitable, and made the evening very special. Is it pricey? Yes. Is it worth it? Absolutely!

Absolutely exquisite from the beginning to end. It’s such an intimate atmosphere and the food was delicious as well as fun and interactive. The wine pairing was perfect. This is definitely my special occasion place like when I have visitors in town. Flawless as well as delicious.

Unbelievable. This was hands down the best meal we have ever had here on Maui. We are long time residents (30plus years) and have tried most restaurants. For some reason we did not discover NyloS until now. Just WOW. We literally clapped after courses. After dining all over the world including many Michelin star restaurants-NyloS is a must if you are visiting or have a special occasion. We’ve already booked our next reservation and are excited to bring family, friends and clients for special dining experiences. How is this a hidden secret? We are telling everyone we know. Huge mahalo to chef Jeremy and his wife Paulina. Outstanding team 🤍

I’ve been to many restaurants of this sort over the years. This one in particular rates high in my list. The husband and wife duo put a personal touch to the experience. The food was also excellent. I’m excited to try it again next time I visit the area.
