Chef Rico's love of food began at the age 10 when he cooked his family's Thanksgiving meal. Nixta Taqueria is the culmination of who he is and what food means to him - imaginative creations that are steeped in technique, history, tradition, and finesse. He and co-owner/boo, Sara Mardanbigi, run this little taco joint on the Eastside.

At Nixta, we use heirloom blue corn from Oaxaca, Mexico, as well as yellow, green and red corn from Barton Springs Mill in Austin, Texas. Over a 15-hour-period, we cook and soak the corn in cal (natural mineral from Mexico) to extract natural gelatins and starches, then run the corn through our molino that uses two volanic stones to grind the corn into masa (the way Aztecs used to do it). From there, we roll, press and get that perfect puff for the perfect tortilla.
