My husband and I were looking for a new restaurant in Vail, and Makoto popped up. It had great reviews so I booked it. I am always a little weary of trying new places especially when Vail has so many wonderful restaurants that I know I will get a good meal at. Makoto exceeded our expectations. Everything from the shuttle that provided transportation to the Hyatt, to the ambiance, the service, and most importantly the food! Hands down our new favorite restaurant in Vail!!

Great sushi and overall food, however it is very loud and there’s a lot of echo in the room. The veggie roll and charred cauliflower were amazing. I cannot give it five stars due to use of seed oils instead of healthier olive or avocado oils. Why do these nice restaurants use oils that we know are unhealthy for everyone?
