Excellent restaurant, romantic, and wonderful food and service. Great location in Sisters, Oregon. We will return again.
The service was fantastic but the food wasn't anything super special. It was definitely good but just didn't wow me.

Food was delicious but did not care for the old fashioned drink. Service was not great - they obviously wanted to close and we felt rushed which is unfortunate when you're spending $150 on a meal for two. I understand wanting to close up, but then please don't offer reservations that will cause guests to be there later than you plan to be open.
The food had great flavor but came cold. We sent it back and when we got it back the Turkey portion was much nicer than the first portion which was 2 small odd chunks of Turkey. It was not a lot warmer though. The room was cold too. We thought it would warm up but didn't. The service was a bit slow but on Thanksgiving so maybe they only had a couple people working.
We enjoy Chops. It's the nicest place in Sisters and food is very good. Great atmosphere. Music in the bar and very helpful wait staff.
Small and cozy, with a unique, creative menu with some new items each time we have been there over the last year. Have had the filet three times and always great. Soup and sides are unique but have always been very good. Rolls are very tasty. Dessert selection is always interesting and very good. Meal price is on high side but has always been worth the money.
Service was great but food missed a bit. Fish over cooked and pork chop a little under done. Our server was very good-did it all with efficiency and graciousness. Dining room was beautiful.

I had a filet mignon, my date had squash ravioli - both were outstanding - so good we shared. The filet was one of the top two or three I have had in my 70 plus years. The service was just as outstanding; the perfect choice for the perfect occasion.
Wanted to take local friends out for a treat. Prices high, food average, so not worth the money. Glad we brought our own wine.

It was my year to plan our anniversary plans, and I decided to check out Sisters instead of always hanging in Bend. I'm so glad we did. The staff was friendly, and did not hover. The food was fantastic! I had the Tortelli, and my husband had the Sea Bass. Both were fabulous dishes. Check it out, it's worth the dollar you pay.

We were hungry for lamb chops. Website advertised them. With a name of Chops Bistro and a rating 4+ we couldn't wait. Upon arrival the menu not only did not have lamb chops, there were not chops of any kind. Go figure. When inquiring with manager were told Duck replaced lamb in April, this is September. And website isn't updated. We stayed and what we did order was excellently prepared, albeit very slow. We waited an hour for the entrees.
Arrived for 630p reservation, seated immediately, given menus & wine list. At 7p we had not even been given water. When the waitress came to fill
our water glasses & take our drink order I asked if she was the only one attending the dining room & her reply was "there was a bartender"....no comment about how long we had been waiting. By 730p when we did not have our drink order, we left.
Just what we needed- good food albeit on the higher price end, wonderful service, nice presentation and superb setting.
Our food choices were some of the best things we’ve ever tasted. They definitely know how not to overcook seafood. I would have given an all-around 5 Stars had it not been for the smoke from the kitchen that hovered throughout the dining room. They weren’t able to open the windows to let it escape as there were no screens on the windows. Everything else was top notch, and we will keep Chops Bistro near the top on our list of favorites.
Service was good and friendly. The food was good with the exception of the duck breast, which was under-cooked. I would go there again, but just order something else.

Great meal. Food was excellent as was the service.
We have always enjoyed Chops, but it was a real pleasure to go back with a new menu solidly in place. Our group of six shared the scallops and ahi appetizers and both were outstanding. This was the first time in a long time at any restaurant that every single person absolutely loved their entree. My duck was delicious and cooked perfectly. One couple in our group loved their dinner so much, they immediately booked a table for two nights later with another set of friends.
We've eaten there twice now, about a year between visits, and have been delighted each time. Both times we were there late...8 o'clock or so...so it was very quiet. Wonderful menu. The duck is excellent! I had braised beef ribs this time and they were perfect. We go to Sisters fairly frequently (live two hours away in Eugene) and this is the best fine dining we've found there. Highly recommended!

Outstanding food! A creative and interesting menu, very well done. This was our second experience at Chops and both times we have been very impressed. It is a bit expensive but worth the money especially compared to similar types of restaurants in the Bend/Sisters/Redmond area. The homemade dinner rolls were excellent, the avocado gazpacho a treat, and the fillet was outstanding with a really interesting and tasty pistachio topping. We shared a very rich and delicious peanut butter chocolate pie! We will definitely return to the Chops Bistro!
Service was very attentive. Pace was leisurely. The setting is very nice! Elegant, but casual is OK.
We had a great dinner for my husband’s birthday. The cocktails were inventive and I had a hard time choosing my entree, everything looked delicious. The ingredients were all fresh and local, and I’m pretty sure I saw our awesome server, Tyson, picking mint from the herb garden to make a drink. We’ll be back!
Celebrated our Anniversary. Everthing was EXCELLENT.
The wait staff was excellent, but, if you want to eat here, you better hurry. They won't be open long.
The food and service were great. The sauces on the filet and the elk were truly remarkable.

The food was outstanding as was the service. Great time with old friends who were back for a visit.
We entered through the bar, deciding to get a drink since we were a half and hour early, and never got service.
Should work on service in the bar area. We were told to take a seat anywhere, which we did but no one ever came to help us. We sat there for at least 10 minutes before we went into the dining room.
We were seated immediately in the dining area and also served immediately.

Great food, and ambiance. The service is too slow, but only because the server has to do it all. Every time we dine here this is the case, and I always wonder why the server has to act as host, busser, cashier and server! We live locally and we know the dinner experience is going to take 2-2 1/2 hours. I've seen other customers leave on more than one occasion because of the long wait. I suggest adding to the service staff!
We had a deeply frustrating meal here. The food, when it finally arrived, was excellent. However, the service was just about the worst I have ever had in a restaurant. I am not sure what was wrong with the set up for the evening. The waitstaff seemed to be ignoring each other, it took awhile to get seated despite the reservation, and worst of all, we waited a VERY long time for our food - 1 hr and 15 minutes from when we walked in the door until when our one and only course was served. This is not ok. There was never an apology or explanation for the slowness offered. The problems in pipeline need to get fixed before this restaurant is worth trying.
Food was as well prepared and complete as when under the Latigo name, drinks even better.
We live locally in Sisters and want to see this restaurant succeed. Inconsistency is going to be detrimental to success. We went to dinner here two weeks ago, and had an incredible meal, and a fantastic waitress! The Mushroom dip for example was delicious. This time it was a bunch of diced mushrooms with cheese on top. Seemed like two different preparations completely with the most recent not nearly hitting the mark. Last time I ordered the Potato gnocchi. It was divine with microgreens on top and bread for sopping up the delicious sauce. This visit, I was looking forward to ordering it again until the waitress said it had been replaced with a Tagliatelle pasta with a fried egg on top. Such a bummer, and for her to not mention that at the same time she let us know that they were out of the Boar tenderlion?! Frustrating. It was not a good replacement unfortunately. Also, the fact that last week they changed the menu to a la cart. Now the $34 Ribeye is just that...a steak...with a head of roasted garlic, where it used to be a complete meal.
Overall, a disappointing experience for a special occasion.
Amazing food! Drove 5 hours and planned our road trip just to stop at Chops... It's that good!!!
