   Once more, we arrived with our dinner entrees already in mind, but were moved to change our order to the "market fish", fresh Alaskan halibut, instead. Good choice. The fish was excellent.

   What a great addition to our food scene. Our food was delicious, the service was friendly, warm and considerate and we hope Fable is around for a long time.

   Great vibe, excellent food, cocktails & wine and a knowledgeable and friendly staff. Absolutely worth the short drive to Eldorado.

   Fable Restaurant and Market is new to our community and a most welcome addition at that. My wife and I have eaten there several times and have had no disappointment...none. We look forward to many excellent lunches and dinners there.

   Fable is top notch in every way. Wonderful staff, Jess will make you feel welcome from the moment you walk in (Jake, Nathaniel, professional and friendly servers), master chef (Paul and Calvin) The food is fresh, creative and consistent— check out the market for lunch with fresh focaccia and empanadas- bartender (Hillary is a bartender, but her drinks are ART!) We just moved from Boulder CO and have a friend who own several restaurants in LA. I would put Fable in the same class as any of the top restaurants we have been to! So glad they are here in Eldorado! We are lucky to have them.

   Food is phenomenal! Best hamburger I’ve ever had; cooked to perfection. Love the ambience, service as well. Very friendly and a desire to ensure you’re happy with your meal. I eat there often and bring new folks with me all the time. We’re soooo happy;!- a restaurant of this caliber was badly needed in this area and so far looks like they’re going to succeed. Than goodness!!!

   Fable was amazing! Such an elevated dining experience. The place is beautiful, the drinks are beautiful, the food is beautiful.

   My wife and I received a gift card for Fable from a neighbor and decided to go last Thursday (04.24.25). Fable is a charming restaurant in an open mall with the ability to seat outside when the weather allows. The restaurant was well attended for a Thursday evening and the service was fast and attentive. We both started with the Caesar salad which was served on crisp, chopped Romaine with strips of Parmesan, flavorful and crisp croutons, and was not over-dressed. My wife ordered the fried chicken as her main dish and I got the short rib. Her chicken was outstanding! It was a large and tender breast/wing with a panko crust served sliced. The chicken was tender and juicy. It was served with a biscuit, cooked collard greens with bacon and a mildly spice honey mustard dipping sauce. My short rib was served shredded with a few gnocchi - which were pretty soggy - and parsley garnish. The beef was tender but kind of a one-trick-pony. For dessert we shared a flourless chocolate tort, which was excellent, and I had a digestive called The Dark Horse which has coffee, coffee liqueur, and dark rum. It was incredible. We will definitely be back to this Eldorado gem! Hopefully, for years to come.

    What a great evening. Everything was delicious. The fish special of Halibut was beautifully plated, and my husband said it was better than what he had at a high-end restaurant on Easter in downtown Santa Fe. The wait person was friendly and professional at the same time. The only negative was the person greeting us when we entered. She could have been friendlier and more communicative.
