We believe in doing things the right way. Not because it’s trendy or cool, but because it’s right. We change our menu with the grow season, supporting our neighbors and the terroir of Colorado. We are not your average Mexican joint, rather a reflection of our environment and beliefs.
We hand make our tortillas every day. All of our pork comes from one whole hog. Our chefs breakdown the whole animal, for chorizo, appetizers, stocks, soups, and entrees. Nothing is wasted. We do this out of respect for the animal and for the people who raised them for us. Anything we can produce in our kitchen is done by us, with love. No frills, just good food.
We do an amazing brunch on the weekends, and by default or menu is nearly 100% gluten free.

Just go for the drinks and apps! NOT THE FOOD. The menu is short and far from Mexican food. Overhyped and overrated. Couldn’t get a chicken taco and they don’t even do normal enchiladas. They only do mole sauce enchiladas which is ridiculous when you think about good sauces and they chose everyone’s LEAST favorite. I asked if I could get a chicken taco and was told no but my friend could get chicken quesadillas. Made absolutely no sense. No ground or fajita beef only Barbacoa which means this place should either fire the chef or just be a bar. Your entrees are a joke!
Margaritas were great but small. Don't go hungry you’ll regret it and over pay. The queso & guac are good but very small portions and weren’t something I’d get twice.
10/10 the Mole was incredible.

We went for our anniversary - I am 9 months pregnant and it was our first time away from our 2 year old all year. The staff didn't rush us, were perfectly attentive, and thanked us for coming in. Even though it was a modified menu it had plenty to offer and I truly wouldn't have known if they didn't tell us. It was a great experience and we felt completely safe with the measures the restaurant took during the COVID pandemic.

I went here for brunch with my mom. Food was delicious. Our waiter was attentive. Music was a little too loud on the patio for my liking but we enjoyed ourselves.

Amazing, fresh tasting food. They were as busy as a restaurant can be during the limited capacity, and it was such an amazing experience. Our service was incredible, even though the servers are quite spread out. We didn't feel it at all. The food was prompt, our margaritas were always refilled, and the churros were the perfect finish. If you haven't been here - you are now required to go!
My friend and I really enjoyed eating at El Jefe. The waiter was attentive without being a bother. The booth was comfortable; the food, delicious.

Amazing food best appetizers in the neighborhood
I had an omelette, which was incredible, but my boyfriend had the carnitas and eggs, which was served with home fries, but the restaurant didn't have ketchup. That meant the potatoes couldn't really be eaten, and there were more potatoes on the plate than anything else! No salt or pepper and no ketchup...why would you serve a bunch of dry potatoes? Overall not bad, as like I said my omelette was great, his carnitas were really good, mimosas were great, and plentiful, with a good server, though he was all business. Cool spot, with outdoor seating and a private room for parties, too.
Brunch was GREAT! $12 all you can drink bloodys, mimosas and sangrias. Great service and pretty good people watching if you sit be the windows.

The food here is really good. And we appreciated the effort to seat us outdoors on the lawn so we could be socially distant. Make sure to try the mole and the strawberry basil margarita. The sugar-salt rim was a nice touch.

El Jefe continues to be one of my favorite places. My friend and I both ordered the fish tacos. We had them saute the fish instead of battered and fried, (which is delicious, but hey, it's summer and we're watching our calories). Every bite was delicious and the fish was perfectly cooked. Everything on their menu is outstanding and they have an incredible and unusual selection of tequilas. I love their brunch, too.

Love ElJefe. Johnny and James are always there and take such good care of everyone. The tacos are SOOO good and they make some really creative (and tasty) drinks!
The only reason I rated the ambiance a 4 is because of the mask requirement and the fact that the restaurant was set for social distancing. Not at all El Jefe's fault, just the reality of life right now. Go out and support your local restaurants, or we may wake up one day and they will all be gone!
The staff is attentive and friendly, they checked on us frequently and were always pleasant. The food has consistently been very good as are the drinks!

El Jefe never disappoints but this time was even more spectacular. The food and drinks were incredible as always but they went above and beyond with their hospitality during covid. We felt super comfortable and they bought us a birthday dessert of fried plantains and ice cream on the house... and make sure to try the new frozen cocktail popsicles. The strawberry horchata was delicious!! Thank you!!!

We thoroughly enjoyed our evening at El Jefe. They did a great job with making us feel comfortable and the food, service, drinks......everything!!......were terrific. We will be going back very soon!
Drinks were great, but a easy way to run up a good tab to. Queso and chips was honestly just okay. A but runny for as thick of a chip as served. Barbacoa tacos were very good, but more high end food truck than traditional barbacoa. Carnitas bowl was very food and well season. Service was friendly and great. Would go again for happy hour or drinks.

El Jefe is one of our favorite spots. We were able to sit outside at a small cafe table due to social distancing guidelines. Food is always delicious, cocktails spot-on, and friendly staff.
First dine-out experience since covid-19 shutdowns. It was a great experience, I felt very safe and there was plenty of space between other tables being used. The food came very quickly after ordering. The Enchiladas de Mole was delicious, I highly recommend it. Glad we choose here as the first place we went out to after reopening.
