Chimney Park Restaurant & Bar, established in 2007 by chef and owner Jason Shaeffer merges the refined elements of dining with a feeling of accessibility and simplicity. The restaurant has become a regional, state-wide and national dining destination in Northern Colorado. In recent years Chimney Park has won the DiRoNA Award of Excellence, OpenTable.com Best Restaurants in America, 2011 and 2015 and Wine Spectator Award of Excellence 2014 through 2018. Housed in historic downtown Windsor, Chimney Park’s original building from 1895 has undergone a recent renovation in 2017, the restaurant’s 10th anniversary. Chef de Cuisine, John Gutierrez sources local, seasonal and organic products from Colorado and the surrounding region. Whether it’s a special occasion, evening with friends or nightly happy hour in the bar, Chimney Park offers an approachable, sophisticated atmosphere!

My crab cake appetizer was wonderful, the ribeye was good but not fantastic. Others in our party were very happy with everything.

As we have become accustomed Chimney Park is a "go to" up scale restaurant in Northern Colorado. When we desire an excellent dining experience---we head to Chimney Park.

The chef's work their magic and never fail to come up with a gourmet meal----but at a price that is creeping up and up.

My wife's meal of roasted vegetables in a balsamic reduction was very, very pleasing to her.

My ribeye was just a tiny but overcooked for my liking---by the time I finished the steak --the last several pieces were overcooked for medium rare.

I made our reservations on here at least 2 weeks in advanced for our anniversary dinner . We get to the restaurant , gave them my name and time of the reservation . . . " I don't find your name in here , I don't see any reservation for you . " REALLY !!!! She kept looking . . . NOPE nothing !!!!! I had even received an email for me to confirm that we would be there for our reservation at 6:30 Feb. 9 . I CONFIRMED IT !! Nope nothing , no record ZIP !!! Then . . . well , I guess I will have to just give you someone else's table. So , we were seated, had a wonderful meal . Our waiter was great . Very disappointed in the NO Reservation on the books and just glad we were able to be seated and that they weren't jam packed and not able to seat us . The menu online also needs to be kept up to date , as there were things on there that are not available . EDIT : Since writing this review I have been contacted by Jason Shaeffer . I was told there was a 'glitch' in the computer system and this is why our reservation wasn't showing up . He had contacted Open Table about this and apologized to me . I told him we LOVE the restaurant and that the food is phenomenal and we will be in again soon !!

Pains me to say this but Chimney Park may be slipping a bit. We've been going to Chimney Park since it first opened and have always enjoyed wonderful meals. Prices are on the high side but generally worth it for the quality of the food. Went there this past Saturday night and left disappointed. These may sound like nitpicks but for a $250 meal for two, everything should be pretty close to perfect. Had the bison tartare for an appetizer and it was delicious but the egg on top was overdone and the yolk barely ran out, which takes away a lot from the overall flavor. Also had the foie gras which was good but not the normal exquisite. My wife and I both had a tomato bisque which was excellent. I had the rack of lamb for entree which again was good, but didn't blow my mind. My wife had the prosciutto wrapped pheasant breast which was the real disappointment of the night. Expecting a juicy pan seared breast of pheasant what we got was more like a pheasant sausage that tasted like luncheon meat. Very disappointing. Maybe we just hit an off night but I would urge the folks at CP to not rest on their laurels and recommit themselves to making sure every dish that comes out of their kitchen is worthy of the price and reputation of what is normally the best restaurant in Northern Colorado.

The only problem that i would change is the unisex bathrooms. they should have a separate bathroom for women and men.

We recently spent a Saturday evening celebrating my husband’s birthday at Chimney Park. What a wonderful experience!

We had a 7 o’clock reservation, and were seated immediately. (There are a few high top tables for two in the bar area for more casual dining.) We were seated in the main dining room at a table for four. There is only one table for two, tucked away in the corner. (So, if you are looking for a private dinner you may want to request that corner table.)

We did not order an appetizer, but someone from the kitchen brought out a small one that was smoked bass on a wafer prior to our salad course. It was yummy. We decided to split a salad, and it was plenty for us. But, if you are looking for a larger dinner salad, you may want to order your own. My husband ordered the fillet of ribeye and I ordered the scallops. So, each of us had “surf and turf” after sharing. Both entrées were outstanding. The steak was cooked perfectly, and the scallops melted in your mouth. We shared the Black forest flourless chocolate cake for dessert. It was beautifully plated with happy birthday written in chocolate along with whip cream, cherry ice cream and cherries. A delicious ending to an awesome dinner. Highly recommend for your special occasion.

Absolutely try the tasting menu, with wine pairings. My 11 year old daughter also lives the food. Not cheap but well worth the expense for a treat.

We were there for my Wife's Birthday, great setting, outstanding service and the food was excellent. Remined my wife and I of the old French Restaurant that used to be in Berthoud. Great place in a quiet easy to get to setting! Thanks, we will be back!

One of my friends was a bit insulted when he was told to remove his hat. We did not have our coats off yet. Many time diners at this restaurant and mature individuals so he took offense.

Especially enjoy Chimney Park on Sunday evenings. It’s often quieter, the menu remains spectacular, the team is on their service game, and the bottle discount on wine makes the experience even better. Very nice evening.

Took the wife for our anniversary, and we cannot even try to explain how pleased we were with our experience. We did the Chef's Tasting Menu and it was fantastic, every single course was wonderful. We cannot recommend it enough.

Once again, Chimney Park never fails to impress. For my special birthday celebration, three of us each ordered the tasting menu with wine pairings, with the foie gras supplement. Each of the five courses were superb, and John Gutierrez and his staff do not seem to miss a trick, even when chef/owner Jason Shaeffer is not in the house or running the kitchen. Of special note, two of us were served a main dish of the wagyu beef, but each was prepared differently with different sauces, emulsions, and accompaniments. The other main dish was the lamb chops. Emily provided us with outstanding service throughout, although she was ably assisted at various times by all of the other extremely friendly servers and staff. We never had to wait for a new course, but we always felt we had ample time for good conversation between courses, and were never rushed. Although we missed Kristopher's special cocktail inventions since we were doing the wine pairings with each course, his wine recommendations with each of our courses highlighted the food. I'm becoming addicted to the Duckhorn Merlot which I was served with my beef main dish. We seem to always see friends when we dine at CP, and Saturday was no exception. Kudos to everyone at Chimney Park for a memorable evening.

Although we enjoyed a special night on Saturday, we truly enjoy CP anytime as a friendly place to just sit at the bar and grab a bite. It is always fun to sit back and watch Kristopher and the others whip up inspired cocktails, learn about new wines, and to learn about upcoming happenings at Chimney Park.

Happy New Year to everyone at CP. Can't wait to see what you bring out for us to enjoy in 2019!

This is my favorite restaurant in the area. It waa my friend's first visit. Our wait person, Daniel, was outstanding and knowledgeable. The soup was delicious and the salmon was seared to perfection.

This is probably our very favorite restaurant. Although it is a little on the higher end price-wise for us, it is worth it as we consider it good value and always have a good dining experience. The food, service and ambiance are excellent for a special occasion or just a really nice night out. They go out of their way to make us feel special. There are not many restaurants that we feel this way about and we hope we can experience many more dining experiences there!

This is the third time we've gone to Chimney Park for our anniversary. We love it because the menu is always different and the food is outstanding. Their salads are always fresh and my husband said the ribeye was the best he'd ever had. The service is always exceptional and we love the ambiance.

One of our absolute favorites! We have never had an experience here that did not exceed expectations. This visit was no exception. We celebrated our 50th wedding anniversary here on the longest night of the year, the Winter Solstice. And, we have celebrated many anniversaries here. The food and service are exemplary! The young wait staff even asked us the secret to a long marrige. How thoughtful. :)
