The best fine dining experience in Northern Colorado hands down. Did the chef's tasting and wine pairing menu this time which was very well done. Plenty of personal attention, and excellent wine selection up to the Tokai and 30 year Tawny with dessert.
We had a lovely birthday celebration for my husband at Chimney Park. Who knew Windsor had such a great restaurant? It was worth the hour plus drive from Boulder. Only wish they'd given him a small birthday treat to top off the tasty dinner.
Fantastic service and the food was top notch! So nice to have this as a dining experience in Northern Colorado.

If you want a unique experience, treat yourselves and your guests and choose the "5 Course Chef's Tasting Menu" at Chimney Park. Chefs Jason, John, and Caroline will inspire your table with their creations. Last Friday, four of us chose the tasting menu (2 of us also had the supplemental premium wine pairing to accompany each course--we deferred on the foie gras supplement, although we know it is fantastic.) None of us received the same thing, which allowed us to also pass dishes back and forth to both taste, savor, and compare. Of course, we all had our favorites, but let me tell you about mine. I asked our wonderful always attentive server Bryan to ask the kitchen to create something "exotic" for each course, and I was not disappointed. Although I truly enjoyed each course--a tuna crudo combo and a whimsical salad--a couple of other courses stood out. I had never before been served menudo with small tortillas at CP, but maybe Chef John's Uruguayan roots came through with a spicy delight. The main course Colorado rack of lamb was a knockout. The final masterpiece was a poached pear with brie--a perfect ending to a perfect night. Among other wonderful courses our table enjoyed were the baramundi, the 1855 Black Angus beef filet, and a wine we must have again--a 2017 Grignolino D'Asti from Tenuta Garetto. We can't thank the Chimney Park staff enough for an exquisite evening. Each and every one of you are attentive, and make each guest feel special, even though you were somewhat slammed with patrons last Friday. If you are coming to CP anytime in the future, we suggest reservations. With Open Table's recent "Top 100 Restaurants in America" award, as well as other accolades, the place is getting busy!
We dined at Chimney Park using a gift card we got for Christmas from our son and daughter-in-law. The restaurant was very clean and had tables well spaced for comfort and conversation. Tables were nicely set for fine dining, but not over-the-top, for a nice casual atmosphere. We were seated immediately for our 5:45 reservation at which time there were a few other available tables, however by the time we were finished eating all tables were full and some were getting a second seating. Our server did a great job. Before dinner a manager brought out a small complimentary crab appetizer which was very nice. Our server was attentive, but didn't overdo it. Food was served timely and done perfectly to order. We enjoyed cocktails before dinner and wine with dinner. The cocktails were of good value. The restaurant's wine list mostly had higher value wines on it. Their "house Cabernet" was $17/glass and by and large I think they might serve their clientele better by offering some less expensive "house" wines. There are a lot of good wines that could be offered for $6-$10 a glass and still offer good profit margin. Overall it was a nice dining experience with good service and good food, both of which are important to us.
It’s always a wonderful dining experience at chimney park! The scallops were seared to perfection and the Bison was tender and full of flavor! Our waitress was professional and timely with all our food and beverages as well as very attentive. We love this place and there outstanding wine list too
The service was outstanding - very attentive but not overbearing. We were so blown away by the chef's 5-course selection which was really 10 different dishes since we each had a different experience with each course. The value was also extremely high for the courses served to us. They also have a great wine selection! We would recommend this restaurant to everyone looking for a unique fine dining experience.

Needed a “grounding” dinner out after significant travel in December. Nothing more “grounding” than a dinner back at Chimney Park. Ordered off menu and knew we’d made the right choice from the starter. Food, service, ambience ... all combined to make us feel “at home”. Kudos to Chef and Alexa. Thanks for a great return home.

Christmas Eve dinner
We had an amazing meal! We were there on Christmas Eve for their fixed menu, and everything was outrageously delicious. I feel like the price was appropriate, and the quality of the meal was exemplary. I had the best squash soup of my life, and it’s one of my favorite things so that’s saying a lot. I was really impressed with the portions; you usually expect tiny plates with fine dining, but every course was a good size. We left pleasantly full. The only things I would say could be improved upon was the service. Our waitress was very attentive, but she mentioned to us and the table next to us that she was tired because she had to work six days in a row. She was very nice, but not very engaging. And I had specified on our reservation that we were celebrating a birthday (my husband was born in Christmas Eve), but the restaurant didn’t seem to have noticed that. The hostess was also pretty brusque.
All in all, exceptional meal, great value, lovely atmosphere, attentive but disengaged staff.

For our historically traditional anniversary dinner, we had the 5-course tasting menu with wine pairing. Superb food and attentive, unobtrusive service. An extraordinary experience.

Decided to try this restaurant last minute for a birthday dinner, after having tried most of the upscale dining in the Northern Colorado area and not wanting to travel into Denver.
The food was delicious! We got the bison NY strip steak and the Snake River NY strip steak, both were incredible. Our waitress, Robin was very friendly and gave a great wine recommendation.
The restaurant was not very busy as it was a Monday evening, so it was nice to be able to enjoy a quiet dinner. Tiramisu and creme brûlée were both delicious as well.
We will definitely be returning for another special occasion.
Girls Christmas dinner
Food was awesome.
Very quiet until an obnoxious group was seated next to us. Obviously, nothing Chimney Park could do about that, but impacted our experience greatly.
The steak was very tough, two dinners had steak and the scallops were not as exciting as usual.
This was our first visit to Chimney Park and it won’t be our last. We started off the evening with well thought out and prepared craft cocktails and it was wonderful to have a server understand we wanted to enjoy those before ordering our dinner. I was excited to try the chef’s tasting menu and even more excited when our server explained we would each get different offerings for most of the courses. What a great approach! It allowed us to share and get even more of a tasting experience. We added in the foie gras option and wine pairings and everything was absolutely well done! I hope I can convince myself to order off the menu next time because there were so many tempting items, but it will be hard not to let the chef make the choices for us!
Best food and service in northern Colorado. The food is absolutely exceptional and cannot be compared to any other restaurant in that area.
