Few restaurants can offer u a vast menu of the most finely prepared food imaginable. Carlos is ever present and always making sure the whole experience is perfect and shared some good stories along the way. Stephanie made me a Dirty Plumber Martini which Carlos originated there. As a plumber I found the martini to be outstanding. The food, service, ambience and overall experience is sublime. With such a huge menu of everything u can think of and the ability of the chef to prepare sheet bliss is a real treat. I will visit Carlos and Stephanie every time I return to Colorado Springs. It's the total package and u won't be disappointed.
We went for an early dinner and were greeted at the door and warmly met by the fantastic wait staff. Everything we tasted was delicious, from the calamari and caprese we started with to the filet stroganoff and lobster we had for dinner, and our deserts of cheesecake and berries. We will definitely be back!

Denver and it was absolutely worth it!!! Carlos is incredibly passionate about food and this type of dining experience is hard to replicate. We can’t wait to come back!
Went for our anniversary dinner. Scoped out the menu before we went so we had an idea on what we wanted to eat. Hubby ordered the Colorado lamb. That was done perfectly. Seasoned perfectly and tender. Probably the best lamb I have had. I had fruit de mere. It was more seafood than I could eat! Not much pasta as it should be! For dessert we shared boozy cherries that satisfied a not too sweet tooth and not too filling. They had 50% off bottles of wine so that was a no brainer. Carlos came by several times to ensure our evening was going well. Service, sanitary gloves, masks all present. Felt comfortable dining out.
This was our first time in The Springs as well as here at Carlos' Bistro. The courtesy, kindness, and the responsiveness from the staff and waiter was phenomenal. We are originally from Kansas City, and I am not used to this level of cuisine and service. I cannot speak highly enough of this fine establishment. Just Outstanding! Thank you for such a great evening.
VERY overpriced. I should have left when the manager told us that the hamburger was on special... $100 off!!! The filet mignon was not tender and overcooked. ( was it even a filet??)

Unfortunately, the pandemic has made it impossible for the owner to offer many of his unusual items. This results in an ordinary menu but at extraordinary prices. Service is quite excellent however.
As always the food was fabulous, the service was impeccable and we had a great dinner.

Carlos Bistro has an amazing attention to detail. Every aspect of the meal experience was perfect. The food is unbelievably delicious and their knowledge of wine is exquisite. They have true Kobe beef imported from Japan. Truly the best steak I have ever had. It is a bit pricey but worth every penny if you truly love great food.

I wish I could give a 6 star for service, food, ambianace,and simply joy at having a non-ruched meal that each course was a savory delight. We decided (group fo four) to go heavy on the appetrizers... escargot, steak tartar, shrimp, then shared a tomahawk Rib eye, followed by heavy on the desserts... amazing bread pudding, crembrulee, and more. The wines were 50% off, so we splurged and enjoyed a 3.5 hour dinner. It is not inexpenseive it is a "value" for the breath and debth of the menue and the food and care. Excellent.
The service was top notch but specifically my dish, the Paella, had so much rosemary that it was inedible. The flavor towards the end of the bit was so bitter it could not be enjoyed. I had this confirmed by the other two members at my table and I brought it up to the waitress and she apologized, but to my dismay, she did not readdress the issue nor did she discount the food which I clearly could not eat. Either way the place is lovely, and Carlos is an absolute treasured small business owner in the springs. There are better places for Paella though.

As always, Carlos is the consummate host. He greeted us outside and quickly escorted us to our table, where our favorite wines were already chilled.
The escargot was outstanding as was the rest of the meal..If you want a great meal, so to Carlos'.
We were visiting Colorado Springs and chose Carlos Bistro because of the great reviews. They were spot on! Fabulous dinner! Beautifully served and perfectly done! Be prepared for an expensive dinner but well worth it!
Carlos' Bistro is always a phenomenal experience! The food is fantastic and service from Carlos and the staff is friendly and personal. They do a good job with COVID mitigations and are offering half price bottle of wines for the rest of the year. Had the Paella which was loaded with shrimp, scallops, mussels, clams, calamari AND chorizo. Wow so good! Highly recommend everyone come and support this family owned gem of Colorado Springs.

Carlos’ Bistro may well be the best food in town, HOWEVER, it comes at a STEEP price!!! Carlos provides personal attention from the moment you arrive and guides you through your dining experience. He is warm, inviting and friendly which really makes your dining experience quite nice. The HOWEVER is based upon prices that make NYC (where I was raised) and LA (where I’’m now from) look cheap!!! Tuna cerviche appetizer for one - that will be $75; Ribeye steak - that will be $180 ala carte; Lamb chops - that will be $95 ala carte! Bottom line, the pricing was ridiculous, if not stupid. Well drinks - $20 a piece! Crazy!!! I can afford this restaurant but hate being taken advantage of! For a party of 2, plan on spending at least $350-$400 minimum! My recommendation, go elsewhere!

My husband and I ate here for our anniversary and it was a perfect choice. It was romantic and the service and food were excellent. We did the early bird menu, which I highly recommend, as this place is very expensive. The only thing I would advice future customers would be on the price of their cocktails and dessert. Unfortunately, the price of neither of these were listed on the menu. I was shocked when we got our bill and saw each cocktail was $20! This is outrageous, especially for Colorado Springs. We go to Las Vegas 3-4 times a year and eat at high end restaurants and STILL don’t pay that much for cocktails. It was very disappointing to have such an incredible meal and then find out we had to pay $100 for 5 drinks. Also, one dessert was $15 and the other $20. Creme Brulee and bread pudding is not worth those prices. The bread pudding was not good. All of our appetizers and entrees were incredible though.
One of the best meals we ever had!!!! They know how to do seafood and other stuff. Owner takes personal care of guests. It’s very expensive but worth every penny.

Took my wife to dinner here for our Anniversary and it was a great experience. The staff was super helpful with any questions and also made it a special dinner for our celebration! Not to mention the food and drinks were top notch!
