In the beginning there has been one word in Carlos’ Bistro, Beautiful. The excellence and the experience of the best in Colorado Springs. Carlos (Owner, Executive Chef, and Matradee) provides a warm and welcoming experience to all of our customers, making everyone feel special at home and relaxed.

We are proud to now offer Japanese kobe and wagyu steaks plus burgers and kobe sausages made with kobe, wagyu, and prime meats at Carlos' Bistro as the state of Colorado is now a member of the Japanese Kobe Club.

    The Restaurant was full with Diners and One Group. Service was still prompt and cheerful, including Carlos, the Owner and Chef. The specially crafted dishes were all designed by Carlos and were wonderful and delicious.

    We love Carlo's for all of our special celebrations. The atmosphere is always welcoming, the food and are to die for and Carlos is always welcoming. Going there NEVER disappoints.

    We really enjoyed our dinner at this elegant restaurant. The service was exceptional and the food was the best we have had in Colorado Springs. Our meat was so tender and the side dishes were delicious. Lots of choices so you will find something for everyone. Please give it a try.

    Wow! Carlos and his team are amazing. The food was spectacular, the service better than some Michelin star restaurants we have been to, and the atmosphere was quaint and comfortable. We will be regulars here. Thanks for an extraordinary anniversary meal, Carlos!!

    GREAT food and a very friendly, customer-orientated staff. Carlos and his team do a great job. Don’t pass it up (regardless of what you think about the location)…it’s a diamond in the rough!
