Cardellino Italian Chophouse is a story steeped in fire, char, steak—and red sauce, parmesan, and truffles. A blend of Midwest chophouse and Italian trattoria, the restaurant reflects Chef Brad Wise’s culinary ethos and TRUST Restaurant Group’s signature style. Live-fire cooking anchors the menu, melding a Tuscan stone hearth with an all-American Big Green Egg.

Drawing inspiration from northern Italy - Umbria, Piedmont - Cardellino offers housemade pastas and traditional antipasti, but the spotlight is on the meat. The signature Bistecca Fiorentina, a 38 oz charcoal-grilled steak, arrives sliced and reassembled on a custom mahogany board. Pork Osso Bucco and Salt-Baked Branzino round out the chophouse-style offerings. Pastas are bold, sides are built for sharing, and the experience is best with Barolo. For a deeper dive, the Tuscan Experience invites guests to enjoy a four-course, chef-curated journey inspired by what Brad’s loving in the moment.

We love Cardellino--it is our "go to" for excellent service and food. We love the manager Chris Wood and all of the staff. The chef and kitchen staff make delicious dishes that are perfect for sharing. The vibe is energetic and "alive" as everyone is having a great time. Thank you!

The food was too salty and the prices have gotten really high. Service and ambience were good though. Given the prices balanced against the flavors, we probably won’t return anytime soon other than for a cocktail.

Decent experience but likely won’t come back. Pasta dishes are very good but it’s definitely on the expensive side for basic pastas. There’s no option for protein add ons for pasta dishes and no chicken option. We celebrated a birthday and the charged us for a “birthday dessert” that we didn’t even ask for - a little annoying. No complimentary bread which seems odd for an Italian restaurant, especially with these prices.

Wow! Food was terrific and so was the service (I think our server was Greg). We had 7 in our party for a graduation celebration. Four of the group participated in the Tuscan Experience and the rest ordered individual dishes. The Tuscan Experience was impressive - you for sure won’t go home hungry! Every dish that we ordered was delicious including dessert. Highly recommend!

Our server John was very knowledgeable and described all menu items in detail . Everything from the cocktails and wine to the food was a 10+. The meatballs and chopped salad were unbelievable and the eggplant parm lasagna was so delicious. All ten of us loved everything. Flavors were spot on with nothing being overly seasoned and the carrot cake was UNBELIEVABLY delicious. Salina was the manager on the floor and she checked in on us continuously and was engaging and paid attention to so much detail and steps of service.. You can tell she focuses on customer service and quality . The restaurant was busy but the staff worked efficiently and in unison. The interior decor and design is very chic and the restaurant looked very clean . It’s always so refreshing when you find a restaurant that is beautiful, clean and with excellent service and delicious, and fresh food. We will be back!
